This soup has many names...Pasta Fagioli also known as Pasta Fazool or Pasta with Beans. Serve with a fresh salad and crusty bread and you've got a great meal! Enjoy! :)

Ingredients
  • 3 cups canned Great Northern beans (drained and rinsed)
  • 1/2 cup diced celery,
  • 2 cloves garlic (lightly crushed)
  • 1/4 cup olive oil,
  • pinch of crushed red pepper,
  • 1 tsp tomato paste,
  • 1/2 cup water,
  • 1 cup peeled, seeded, chopped fresh tomatoes,
  • pinch salt,
  • 1/2 lb small pasta noodles (cooked and drained)
  • *Options* You can even add a half cup diced ham to this recipe.

Directions
  1. Cook celery and garlic in olive oil in a large saucepan over medium heat. When garlic is golden brown, remove garlic.
  2. Add tomatoes, tomato paste, crushed red pepper, salt and water.
  3. Simmer for 12 minutes, or until thickened.
  4. Add beans and pasta.
  5. Simmer another 5 minutes.
  6. Serve immediately.
