Red Curry-Lime Chicken Wings

- 4 pounds chicken wings, tips discarded, wings separated into 2 pieces shopping list
- extra-virgin olive oil, for drizzling shopping list
- salt and freshly ground pepper shopping list
- 6 Tbs. unsalted butter, softened shopping list
- 1 Tbs. Thai red curry paste shopping list
- 1 Tbs. honey shopping list
- juice and finely grated zest of 1 lime shopping list
- 1 tps. soy sauce shopping list
How to make it
- Preheat oven to 475. Spread the wings on 2 large rimmed baking sheet. Drizzle with olive oil, season with salt and pepper and toss. Bake the wings for about 40 minutes, or until browned and crisp.
- Meanwhile, in a large bowl, blend the butter with the curry paste, honey lime juice and zest and soy sauce. When the wings are done, transfer them to the bowl and toss with butter until well coated. Transfer the wings to a platter and serve.

I am saving this recipe it has been a while since I have used Thai red curry paste. It gives this sauce a good amount of heat. The lime has a refreshing quality. My friends will love this!!!
