Ingredients
  • 12 Large white mushrooms
  • 8 oz. cream cheese (I use Philly light)
  • Milk (just add till the right consistency, not soupy, just to thin it for stuffing)
  • Green onions - finely minced (about 2 Tbls.)
  • Crumbled bacon (I use Hormel real crumbled bacon already cooked, saves time and fat)
  • Tiny salad shrimp - about 1/2 cup (fresh or frozen, thawed)
  • Dill weed (to taste)
  • Shredded cheddar

Directions
  1. Rub mushrooms with paper towel or mushroom brush to clean
  2. Remove stem and inner membranes
  3. Put mushrooms on cookie sheet
  4. Mix cream cheese with milk to desired consistency
  5. Add minced onions, bacon, dill weed, and shrimp to cream cheese mixture
  6. Mix together and fill into mushroom caps
  7. Top with shredded cheddar
  8. Place under broiler on middle rack till hot and cheddar is melted
  9. Carefully remove from cookie sheet and place on serving platter

Okay, you can use crabmeat instead of shrimp, or no shrimp at all. I like to add it for protein. I suppose you could add some leftover chopped chicken or anything for that matter.

Those do sound wonderful, Donna. I don't know how I missed them, but I have them printed to try now.


Made these this Friday for 4th of July bbq. Used sour cream to thin the cream cheese. Didn't get any pics because I had to assemble at home and take up the street, baked in preheated 400* oven for 10 mins. They turned out great - not watery - I like the sour cream addition.


Eating these for dinner tonight - cause it's just me and I can - LOL Hence my avatar for the night. ;')


Those look great! I'm going to do them just how you have them but add some hot peppers! I love cream cheese and never had them in a stuffed mushroom. Only the proverbial crab and breadcrumbs and ones with Italian sausage.


These are soooooooo Good.. and easy... Making agoin tomorrow.. before storm.. Got some stuff in frig I want to use up.. and mushrooms are one.


I'm not a seafood eater, but these will be great without it. Have you ever tried microwaving them? Or cooking them on the stovetop until the cheese melts? I'm saving this until it cools down so I know what it's supposed to taste like before I play with it. Thanks for the recipe.

I've never made my own stuffed mushrooms. This looks easy enough to give it a try. :)

P.S. I like how you wrote the recipe out. I'm that way, too. Actually a lot of the times I might not enter a recipe because I am not sure of exact amounts.
