Ingredients
  • 4 boneless, skinless chicken breasts
  • 2 tablespoons honey
  • 1 tablespoon finely chopped jalapeno pepper
  • 1/4 teaspoon McCormick® Garlic Powder
  • 1 egg
  • 3/4 cup unseasoned dry bread crumbs
  • 1/4 cup flour
  • 4 teaspoons Old Bay® Seasoning
  • 1 tablespoon McCormick® Parsley Flakes
  • 2 tablespoons oil

Directions
  1. Wash and pat chicken dry. In a shallow bowl blend honey, jalapeno pepper, garlic and egg. On a separate plate, mix breadcrumbs, flour, OLD BAY® Seasoning and parsley flakes. Dip each chicken breast in honey mixture, then in breadcrumb mixture. Repeat with honey and breadcrumb mixture.
  2. In a large non-stick skillet, heat oil over medium heat. Saute chicken 5-7 minutes per side or until chicken is done.

This was very easy and tasty. I'd never put raw peppers in a wet coating before, so that was interesting :) I did double the pepper(will triple next time), but that's just a personal preference. Used fresh parsley, too, and topped each serving with a lil cojita cheese...not because it "needed" it, rather cus it looked pretty. :) I served it with cumin rice. Very good. Thanks for sharing it, Sharyl! :) **by the way, next time, I'll use Panko**

I made this last night sort of....I used boneless pork chops instead of chicken. It was very good. I was very pleased that the jalapenos werent too much for my kids. Like Keni I doubled the jalapeno and used fresh parsley out of my herb garden. I served mine with Missdrea's Mexican Rice recipe from here. Thank Sharyl I will be making this again and will try it with the chicken next time.


Made this last night and it was delicious! Very flavorful! I wasn't sure if the jalapenos were supposed to stick with the egg wash to the chicken but mine did not. I was worried, but to my surprise you could taste the hint of jalapeno anyways! This makes a beautiful crust as well! I did use panko bread crumbs as Keni suggested, but I'm sure it's good either way. Also used fresh parsley as well. This was a great recipe and thanks Sharyl!
