Ingredients

How to make it

  • In a small pot, reduce the Whiskey, Grapefruit Juice and Honey until it becomes like thin syrup. Let cool slightly. It will thicken a little.
  • Fit a cooling rack on top of a sheet pan and place the Salmon Strips on the rack. Brush the Salmon generously on all sides with the Grapefruit-Scotch glaze. Cover loosely with foil and refrigerate for 30 minutes.
  • When Ready: Slice Salmon into 3/4-1″ wide strips and set aside.
  • In a small bowl, whip the Cream Cheese and Mascarpone together; stir in chopped thyme. Set aside.
  • In a separate bowl, gently toss the chopped Grapefruit with Chipotle Powder Set aside.
  • Brush bread slices with olive oil and broil both sides until lightly golden and crisp. Let cool to room temperature.
  • Spread toasts with Cheese mixture. Divide Salmon evenly among Toasts, piling loosely. Top with Chipotle Spiced Grapefruit and a few Capers. Serve immediately.

    do you think i could substitute smoked paprika and/or cayenne for the chipotle powder? i really want to make this tonight and have everything except for the chipotle powder. (i do have smoked paprika and cayenne though)

    I made these tonight and I can't even describe how delicious they were. Plus, they are so pretty. I love the textures and flavor combination. The cheese-thyme spread was luscious. The smoky flavors of the Bowmore Islay, the salmon and the chipotle powder in the grapefruit tied everything together with a tasty and heady bow. Add the tart yet sweet kiss of the grapefruit and the briny touch of the capers. Perfect.

    I wish I could rate you again - this is a wonderful appetizer. I had some for dinner - and didn't need anything else. Crostini and cocktails - bliss! Outstanding job, Jim sweetie.... ;-)~ Vickie
