Ingredients
  • 12 ounces smoked salmon
  • ½ cup Grapefruit, peeled, sectioned and roughly chopped
  • 2 Tbls Capers
  • 4 oz Cream Cheese, softened
  • 4 oz Mascarpone, softened
  • Leaves from ½ bunch of fresh Thyme, finely chopped
  • 1 Tsp finely ground Chipotle powder
  • 2 Tbls Good EV Olive Oil
  • 2 Baguettes, cut on the bias into 1/4″ slices.

  • GLAZE
  • ½ cup Scotch Whiskey (Preferably an “Islay” for its smoky flavor but any good Scotch will do.)
  • ¼ cup Grapefruit juice
  • ¼ cup Honey

Directions
  1. In a small pot, reduce the Whiskey, Grapfruit Juice and Honey until it becomes like thin syrup. Let cool slightly. It will thicken a little.
  2. Fit a cooling rack on top of a sheet pan and place the Salmon Strips on the rack. Brush the Salmon generously on all sides with the Grapefruit-Scotch glaze. Cover loosely with foil and refrigerate for 30 minutes.
  3. When Ready: Slice Salmon into 3/4-1″ pieces and set aside.
  4. In a small bowl, whip the Cream Cheese and Mascarpone together; stir in chopped thyme. Set aside.
  5. In a separate bowl, gently toss the chopped Grapefruit with Chipotle Powder Set aside.
  6. Brush bread slices with olive oil and toast or broil both sides until lightly golden and crisp. Let cool to room temperature.
  7. Spread toasts with Cheese mixture. Divide Salmon evenly among Toasts, piling loosely. Top with Chipotle Spiced Grapefruit and a few Capers. Serve immediately.

I made these tonight and I can't even describe how delicious they were. Plus, they are so pretty. I love the textures and flavor combination. The cheese-thyme spread was luscious. The smoky flavors of the Bowmore Islay, the salmon and the chipotle powder in the grapefruit tied everything together with a tasty and heady bow. Add the tart yet sweet kiss of the grapefruit and the briny touch of the capers. Perfect.

I wish I could rate you again - this is a wonderful appetizer. I had some for dinner - and didn't need anything else. Crostini and cocktails - bliss! Outstanding job, Jim sweetie.... ;-)~ Vickie

Do you think i could substitute smoked paprika and/or cayenne for the chipotle powder? i really want to make this tonight and have everything except for the chipotle powder. (i do have smoked paprika and cayenne though)
