Grapefruit and Whiskey compliment the smoked Salmon perfectly in this unique Crostini appetizer. The Chipotle powder enhances the smokiness of the Salmon and brings a little "zip" to the dish. Hope you enjoy...

I made these tonight and I can't even describe how delicious they were. Plus, they are so pretty. I love the textures and flavor combination. The cheese-thyme spread was luscious. The smoky flavors of the Bowmore Islay, the salmon and the chipotle powder in the grapefruit tied everything together with a tasty and heady bow. Add the tart yet sweet kiss of the grapefruit and the briny touch of the capers. Perfect.
I wish I could rate you again - this is a wonderful appetizer. I had some for dinner - and didn't need anything else. Crostini and cocktails - bliss! Outstanding job, Jim sweetie.... ;-)~ Vickie
