Whiskey & Grapefruit Glazed Smoked Salmon Crostini

- 12 ounces smoked salmon shopping list
- ½ cup grapefruit, peeled, sectioned and roughly chopped shopping list
- 2 Tbls capers shopping list
- 4 oz cream cheese, softened shopping list
- 4 oz mascarpone, softened shopping list
- Leaves from ½ bunch of fresh thyme, finely chopped shopping list
- 1 Tsp finely ground Chipotle powder shopping list
- 2 Tbls Good EV olive oil shopping list
- 2 baguettes, cut on the bias into 1/4″ slices. shopping list

- ½ cup Scotch whiskey (Preferably an “Islay” for its smoky flavor but any good Scotch will do.) shopping list
- ¼ cup grapefruit juice shopping list
- ¼ cup honey shopping list
How to make it
- In a small pot, reduce the Whiskey, Grapefruit Juice and Honey until it becomes like thin syrup. Let cool slightly. It will thicken a little.
- Fit a cooling rack on top of a sheet pan and place the Salmon Strips on the rack. Brush the Salmon generously on all sides with the Grapefruit-Scotch glaze. Cover loosely with foil and refrigerate for 30 minutes.
- When Ready: Slice Salmon into 3/4-1″ wide strips and set aside.
- In a small bowl, whip the Cream Cheese and Mascarpone together; stir in chopped thyme. Set aside.
- In a separate bowl, gently toss the chopped Grapefruit with Chipotle Powder Set aside.
- Brush bread slices with olive oil and broil both sides until lightly golden and crisp. Let cool to room temperature.
- Spread toasts with Cheese mixture. Divide Salmon evenly among Toasts, piling loosely. Top with Chipotle Spiced Grapefruit and a few Capers. Serve immediately.

Hey Jim ! I'm loving the cream chease/Mascarpone mix. smokeyness of the Chipotle + Whiskey in the glazing. Sounds like the perfect blend for texture and flavor! 5+ on this one my friend. You impress me once again.
