Ingredients

How to make it

  • In large pan or dutch oven, saute onion in butter until soft
  • Add tomatoes, stock and salt and pepper and cook until warmed through
  • Add baking soda and stir to combine
  • Add half and half and lower temp and heat to warm through
  • taste and add more salt and pepper as needed
  • *the TYPE of tomatoes in this is key, really, so, while subs can be made, I hope you try it just like this, first. :)

    I had the priviledge of making this heavenly soup while working as GM in Billings, Mt. Certainly an unforgettable experience. I had customers from every state request it. One of my most memorable expeiriences was carring out a container for a guest and slipping on the ice. Red was I! Lol

    Had some cut up tomatoes in the freezer. Used a food mill on them to extract the juice and pulp. Turned out more watery than crushed tomatoes. Should have gone along the line of what jules did.

    Will have to make this again properly.

    Hey Keni, I went ahead and made this with our garden tomatoes. I parboiled them, removed the skins. I crushed a part of them, and a part of them I chopped fine. I used twice the amount of tomatoes, since I then cooked them down to reduce the tomato juice and added a tbsp. of tomato paste to give it a more of a canned, or acidic flavor. The soup tasted delicious, the only thing is, that pt. of half and half really turned it kind of pink. Yours all look more red, I guesse because of the canned tomatoes. Lem me assure you, it still tasted great! And I got rid of my tomatoes! Added my picture.

    Hey mimosa...nope, none needed...that's what I meant about the tomatoes being key...the crushed gives just the right texture, then add half as many of the SMALL diced, and it's just perfect, we think....and, then the creaminess, of course :)
