Ingredients

How to make it

  • Melt the 1 tablespoon of butter in saucepan over med-high heat. Add onions and sauté until soft but not quite brown.
  • Stir in the apples, curry powder, stock, and lemon juice and bring all to a boil. Turn down the heat & let simmer for approximately 10 mins.
  • Melt remaining butter in another saucepan over med-heat until the foam subsides.
  • Blend in the flour and cook for 1 - 2 minutes, stirring the whole time. Now slowly stir in soup until it is well blended.
  • When mixture reaches a boil, remove it from the heat. Strain it into your first saucepan, pressing apple & onion with the back of a spoon.
  • Stir in cream.
  • Cook just until heated throughout. Now taste and adjust seasonings to your liking.

    my apple tree went off this year ,,, this soups going on this weekend, it may or may not be for everyone but who cares, originality beats boring hands down. Thanks for the recipe!

    Let me start by saying I didn't expect much care for this even though I am a huge soup fan. I have found very few dishes I like the Indian "curry" flavor in(I do like Japanese curry, though), I often don't care for sweet/savory and I don't like the pumpkin or squash soups. BUT, I recently discovered that though I tout myself as culinarily adventurous, I also, much more often than not, pick recipes to try that I am pretty darn sure I will like. So, I decided to tear down one wall of my box and try something out of my fairly large comfort zone! :) Well.... I really liked this! I followed the instructions and ingredients other than finishing it with heavy cream rather than light. I mashed the apples a bit while they were cooking down, but I strained through a mesh sieve and the result was a creamy, warm, deep flavor, but also light enough I can see this tasting good after being sick. I couldn't eat it every day, but I will make it, again. Oh, and the lemon juice is a must in this. Perfect amount of acidity for the cream.

    It as great - fast and easy to make!
    One safety note - In step 4 BE VERY CAREFUL slowly stirring in soup into butter/flour mixture. Just a couple of minutes of cooking flour in butter was enough for saucepan to overheat. Soup started boiling imediately on contact with second saucepan, splattering around. (nobody got hurt).
    Love curry, so for my taste maybe could try a little more next time.Also ended up dumping rest after straining into the pot.
    Saving into favorites.

    In step 5 use a blender to puree the mix instead of straining it (easier, quicker and saves the plup).

    My wife and I tried the Apple Curry Soup last night. It turned out wonderfully and was easy to make. Very yummy. Instead of adding "store-bought" curry powder we used one of the homemade curry powder recipes found on this web site, great results (wow the aroma!!). Step 5 of the directions says to press the mix through a strainer. Well, at that point I began to wonder about all that lovely plup stuck to the strainer going to waste. So I dumped everything back into the pot, lumps and all. I then grabbed my Braun "blender on a stick" thingee and pureed the works. Worked great and tasted great. I could have also dumped it into the blender and gotten the same results.
    Thanks to Kristopher for an easy recipe that tastes great and generated a lot of comments.
