Apple Soup Recipe
This is a unique little dish. If you have never had apple soup I think you should give it a try. It isn't for everyone, but I love it!

Ingredients
  • 1 large onion, chopped
  • 4 tablespoons butter
  • 3/4 tablespoons of curry powder (you can modify this amount)
  • 1 quart chicken stock
  • 2 large green apples, peeled, cored & chopped
  • 1/2 cup light cream
  • juice of 1/2 lemon
  • 1/4 cup all purpose flour

Directions
  1. Melt the 1 tablespoon of butter in saucepan over med-high heat. Add onions and sauté until soft but not quite brown.
  2. Stir in the apples, curry powder, stock, and lemon juice and bring all to a boil. Turn down the heat & let simmer for approximately 10 mins.
  3. Melt remaining butter in another saucepan over med-heat until the foam subsides.
  4. Blend in the flour and cook for 1 - 2 minutes, stirring the whole time. Now slowly stir in soup until it is well blended.
  5. When mixture reaches a boil, remove it from the heat. Strain it into your first saucepan, pressing apple & onion with the back of a spoon.
  6. Stir in cream.
  7. Cook just until heated throughout. Now taste and adjust seasonings to your liking.

My wife and I tried the Apple Curry Soup last night. It turned out wonderfully and was easy to make. Very yummy. Instead of adding "store-bought" curry powder we used one of the homemade curry powder recipes found on this web site, great results (wow the aroma!!). Step 5 of the directions says to press the mix through a strainer. Well, at that point I began to wonder about all that lovely plup stuck to the strainer going to waste. So I dumped everything back into the pot, lumps and all. I then grabbed my Braun "blender on a stick" thingee and pureed the works. Worked great and tasted great. I could have also dumped it into the blender and gotten the same results.
Thanks to Kristopher for an easy recipe that tastes great and generated a lot of comments.


In step 5 use a blender to puree the mix instead of straining it (easier, quicker and saves the plup).


Apples and curry.. sounds heavenly. We just had curry chicken for dinner tonight and I'm still needing more curry. LOL!

It as great - fast and easy to make!
One safety note - In step 4 BE VERY CAREFUL slowly stirring in soup into butter/flour mixture. Just a couple of minutes of cooking flour in butter was enough for saucepan to overheat. Soup started boiling imediately on contact with second saucepan, splattering around. (nobody got hurt).
Love curry, so for my taste maybe could try a little more next time.Also ended up dumping rest after straining into the pot.
