Ingredients
  • 300g (10 1/2 oz) rolled oats
  • 100g (3 1/2 oz) granola
  • 115g (4 oz) chopped hazelnuts
  • 115g (3 1/2 oz) flaked almonds
  • 4 1/2 oz butter
  • 50 g (5 oz) dried red fruits (Your choice I chose cranberries and strawberries)
  • 175g (6 oz) Manuka honey (this is recommended but I used honey that I had in, as Manuka honey is quite expensive)
  • 1/2 teaspoon (2.5 ml) ground cinnamon
  • 1 vanilla pod. seeds only
  • a pinch of salt
  • 50 g (2 oz) melted white chocolate for the topping

Directions
  1. Set oven to 180c
  2. Combine the oats, granola, hazelnuts, almonds and dried fruits in a large bowl
  3. Cut the vanilla pod in half length ways and scrape out the seeds
  4. Place the honey, butter, cinnamon, vanilla seeds and the pinch of salt in a pan and simmer for 3 minutes
  5. Add the mixture into the dry ingredients in the bow and mix together
  6. press into a shallow oven tray and bake for 25 minutes
  7. Whilst still warm, mark out the indentations for the bars
  8. Leave in the tray to cool and set for 30 minutes
  9. Cut into squares
  10. Place the white chocolate into a bowl over a pan of simmering water and stir gently until melted
  11. Using a wooden spoon, fleck the surface with the melted chocolate

PERFECT! I make energy bars all the time. Honey and Oats...my kind of snack. Thanks!

I also make energy bars all the time, I am wondering if anyone knows of a place to get molds for energy bars? I know I'm pretty anal, but I like them to look exactly square and the same size. I have looked on amazon, but could not find any 'granola bar molds'

I'm sure raw honey would be fine, right?

Hi Vivian.. I have not got around to making these yet, but I'm thinking for the fourth of July. I might make them the day before so my son can take a few out with him to snack on. And I'm thinking about using some dark chocolate for the topping. And nope I haven't gotten around to ordering the molds either- as you can see I'm a procrastinator.
Hope your day is good!

Are these like the kashi bars? I could eat the whole box of those!

Ok I have written the recipe down, and will be making these tomorrow! only replaced a few things, for the dried fruit I'm going to use sun dried Goji Berries, since I already have them here, and I don't know where to find a vanilla bean pod,so I'm just going use pure vanilla extract and add that into step three. Also I will be using chopped macadamian nuts, since I already have those too! they are chocolate covered, but what the heck. Also I'm going to have to do a lot of looking up measuring amounts, like how much exactly is 4 1/2 oz of butter? Anyway this will be fun for me and my son to work on together.
PS the shallowest pan I have is a cookie pan, will that do? it has sides. So instead of cutting into squares I'm going to cut them into bars. I will send you a picture if they come out good.
:)Marie.

We made them! I asked my son to rate them on a scale from one to five, and he says four and I asked him why a four and he says because they give you to much energy! that they do. ( also made the mistake of letting him dip a granola bar into the left over milk chocolate, he is zinging around here getting ready for the day anyway- I am going to give you a 5 rating, they came out awesome just like you said they would.

You don't have to add the chocolate if you don't want to, but hey! it's only a drizzle.
