My own creation after seeing it's description on a restaurant menu, online! The mix of flavors is just great, and the heat is meant to be an accent flavor, rather than a primary one.

Ingredients
  • 1lb pasta of choice(prepared per package directions while making rest of meal, or prepare ahead and keep warm)
  • 2T butter
  • 2T olive oil
  • 1/2 red onion, diced
  • 2-4 fresh jalapenos, diced
  • 1 can(14.5oz) Italian style diced tomatoes
  • 9oz fresh spinach, chopped
  • 1lb Tilapia fillets
  • **Lemon Cream Sauce**
  • 1/4 cup white wine or chicken stock
  • the juice from 2 lemons
  • 1/3 cup heavy cream or half and half
  • 2 sticks(1 cup) butter, chilled
  • salt, pepper and basil

Directions
  1. Start water to boil for pasta while preparing other aspects of the dish.(or, at least, this is what I do ;)
  2. Start lemon cream sauce by heating wine or stock and lemon juice and allow to fully simmer while starting the next step.
  3. In dutch oven or high sided skillet(I used my cast iron), saute jalapenos and onions in butter and olive oil until onion turns slightly opaque.
  4. Add garlic, spinach and tomatoes and simmer while continuing the lemon cream sauce.
  5. Once stock and juice has reduced by half, slowly whisk in cream and simmer about 5 minutes.
  6. Add tilapia fillets to tomato/spinach pan, reduce heat, cover and let "steam/simmer" while finishing cream sauce.
  7. To simmering cream sauce, add butter, 1-2T at a time, whisking constantly to achieve a thick, combined sauce.
  8. Add salt and pepper and basil to taste.
  9. Toss with hot, drained pasta
  10. Serve a fillet of tilapia over bed of pasta, topped with spinach/tomato sauce.
  11. ***please note, I tried to set this recipe up in a good order of preparing it, rather than the usual one aspect of the dish at a time, in hopes of making it easier to make sure all the components are done at the same time! :)

I've never had anything like this, but I love all the ingredients. I love fish, but have never had Tilapia to be honest. I will see if I can find it here in the stores. This is a recipe I must try - Thanks Keni!

I made this for myself for lunch today and as always it was great. i thought the lemon juice would be too overpowering but the addition of the jalapenos and tomatoes offeset it nicely. very tasty with just the right amount of heat. A+ and 5 forks as always.

Super good! The sauce is AMAZING!!!!! I served mine with whole wheat pasta and used my cast iron for the fish and vegies (which I highly recommend) and it was perfect! Thanks once again for a great dinner Keni!
