Ingredients
  • 1 cup milk
  • 1 egg
  • 2 1/2 tsp. vegetable oil
  • 1 1/4 cup flour
  • 3 tsp. sugar
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 2 tsp. baking powder
  • 1/2 tsp. salt

Directions
  1. In a bowl combine milk eggs and veg. oil.
  2. stir in the rest of the ingredients.
  3. Heat a lightly oiled pan over med to med high heat (may want to turn down on second batch so you don't burn them). Pour about 1/4 of the batter for each pancake and brown on both sides. Serve with your favorite syrup and a dab of butter. These are also just as great served with just butter! Enjoy!
  4. * If you like thinner pancakes just add more milk to your liking.
  5. ** This recipe makes 4 descent size pancakes...if you are big breakfast eaters definitely double the recipe for 4 people.

Thanks for a great recipe! I made these for snacks for Joy School today and they were a big hit. I made small cakes and served with butter and powdered sugar. I might make another batch for the older kids when they get home from school.
The only thing I changed was to add a tsp aof vanilla.

Made these again. Used up partial bottles of artificially flavored maple syrup, orange marmalade, and mango chutney.

Yeah baby! :P


Made these again. Finding out to keep the temperature as high as possible without going into the burn stage to make the cakes rise better. A light golden brown color leaves the edges of the cakes tapered. A darker brown color makes the cakes rise straight up on the edges. Nice and fluffy. So monitor your heat closely.

Used Light Karo syrup and Honey this time.
