Ingredients
  • 4 boneless, skinless chicken thighs or breasts
  • 4 tablespoons Dukes real mayonnaise
  • 2 tablespoons brown spicy mustard
  • 1 cup seasoned bread crumbs
  • OR
  • 4 tablespoons Dukes real mayonnaise
  • 1 teaspoon horseradish
  • 2 tablespoons dijon mustard
  • 1 cup unseasoned bread crumbs

Directions
  1. Preheat oven to 350 degrees.
  2. Flatten chicken breasts slightly with a mallet or the lower part of the palm of your hand.
  3. Mix mayonnaise and mustard together and dip chicken breasts in mixture.
  4. Roll chicken breasts in bread crumbs and bake uncovered for 20 to 25 minutes.
  5. ****HINT****
  6. The mayo mix is really thick, and "dipping" the chicken in it is way messy, and if you get it on too thick then of course the coating will come out of the oven on the mushy side. I put the chicken in on a plate, and bruch the mayo mixture on with my silicone brush, so that I can get just a think layer. Then I coat the chicken with the breadcrumbs.
  7. I've used this with turkey breast cutlets, and it was good, but, I like it better with the chicken breasts (or thighs)
  8. *** Mayo Note *** I would use a real Mayo, not a salad dressing. I used to suggest Kraft all the time, but, they changed their formula last year (on mayo and dressings) when they changed the packaging...and we don't buy any of them anymore. ICK. The mayo tastes like Miracle Whip now, which was already Kraft, so, why? But, anyway...Dukes is the only thing around here I've found that tastes similar to the old Kraft Real Mayo. Not a fan of Hellmans or JFG, but, I think whatever you like would work for you.

Sounds good! I'll have to try it some time. It is a variation of the Hellman's Mayonnaise recipe. I like the addition of the mustard. I have lots of mayonnaise so I will definately try it.

Cant say that I've even seen Dukes mayo around these parts but I will look for it. If I cant find it, hopefully Hellmans will do :-)

I've done a variation of this for years...mustard and crushed breakfast cereal [whatever I have at the moment] but I never thought of mayonnaise. What a good idea!

I am back to tell you that I made this and it was so good! It really speaks for its name! Everyone loved it, even kids! Served it with some honey mustard for dipping to balance the mustard and horseradish in the crust. Will be making this often! Lori, you're spot-on about the mayo thing. I used to be a Kraft gal, or a JFG gal, Hellman's or Duke's either one. But when they switched the Kraft over (more sweetie-vinegary--like MW) I quit 'em. Then JFG always has tasted kind of "greasy" to me. Well--that left Hellman's or Dukes--but Hellman's has aquired that same "sweet" flavor the Kraft has now---so I am left to my mayo devices with Dukes!! LOL Must be a Southern thang...
