This is my version of an elegant cannoli dessert! It is perfect for a romantic evening!

Ingredients
  • 1 cup part skim ricotta cheese
  • 1/4 cup confectioners sugar
  • 1/2 tsp. pure vanilla extract
  • 1/2 tsp. pure almond extract
  • 1/2 cup graham cracker crumbs
  • 2 Tbls. melted butter
  • 1/4 cup chopped canned peaches or other fruit of your choice
  • 2 Tbls. shredded semi sweet chocolate

Directions
  1. In a medium size bowl mix together first 4 ingredients til smooth.
  2. In a seperate bowl mix together graham cracker crumbs and melted butter.
  3. Take 2 wine glasses or other fluted stemware and place 1/4 of the crumb mixture in the bottom of each glass making a well in the center. Then add 1/4 the cannoli cream mixture on top. Repeat this one more time. Then garnish with chopped fruit and shredded chocolate.
  4. Chill til ready to serve.

Lillian - yum, this has me craving cannoli. FYI and for another fattening variation... back in NY I used to buy an outrageous cannoli cake from an Italian bakery. I do not buy cake as a rule but oh, was that heaven. Light white layers and instead of icing they used cannoli cream and garnished with mini chocolate chips. A taste sensation!


Lillian, you've been holding out on me...this sounds - and looks - like something I could fall in love with quite easily (like with my first bite perhaps?). I have some ricotta in the fridge, left over from the 3 pack I had to buy at Costo when I made lasagna a few weeks ago...been wondering what to do with it...think I just found it!!!

Made this last night and it was fabulous! Love the combination of flavors, and that almond extract really adds a nice touch. Bryan loved it, and wants me to make it again using strawberries. This will definately be one that goes into the dessert rotation! So easy, and so delicious! Thanks Lillian.

Oh my, this was fantastic, Lillian! The almond extract was perfect with the strawberries I used...so delish! If you like cannolis, you will love this creamy, crunchy, fruity dessert - if you've never had the joy of eating cannoli, TRY THIS recipe...I'm betting you will love it. It makes such a pretty presentation in a clear glass, too - great "company" dessert (and so quick and easy)...thanks, Lillian - this one goes in the "keeper" file!

Honestly Lillian, are you TRYING to make me fat?! Because you are! Well, I just made this tonight and it was awesome of course :) I used whole milk ricotta and used mini chocolate chips and strawberries. Yum! Sorry no pic, my cameras broken :(

how about cherries instead of peaches


How about Stevia instead of sugar? With Stevia, it takes less, and sweetens exactly like sugar, and it is safe for diabetics! Great recipe! :+D
