This is a very nice and comforting soup. So full of great beany, bacony and herb flavors. We love it and hope you do as well. I serve this with jalapeno cornbread and both are very well received and always eaten right up. Read more Enjoy See less

Ingredients

4 strips bacon cooked and chopped shopping list
1 can white kidney beans shopping list
1 can black beans shopping list
1 fresh tomato crushed shopping list
3 cups vegetables stock shopping list
1 medium red onion shopping list
4 cloves garlic shopping list
4 green onions shopping list
4 stalks celery shopping list
1 large carrot shopping list
3 ears fresh corn kernels cut off ears shopping list
1/4 cup fresh coriander shopping list
1 teaspoon salt shopping list
2 teaspoons freshly ground black pepper shopping list
3 tablespoons grated pepper jack cheese shopping list
1 large fresh jalapeno pepper minced shopping list

How to make it

Combine all ingredients in a large soup pot and simmer for 30 minutes. When ready to serve put into soup bowls and sprinkle cheese and jalapenos over top and serve immediately.

Well, the weather was a little cooler today, so I made this soup! The flavor of the vegetables really comes through! I made it as written except I sauteed all the veggies in the bacon grease. I also omitted the coriander...I'm just not a big fan of it! I added 1 tsp. of dried thyme instead. And I was not brave enough to use 2 tsp. of black pepper, so I only used 1/2 tsp. I love the cheese and jalapeno topping! This was perfect with the cheddar corn bread that I served it with! Thanks for this recipe! I added my photo to the collection :)

Okay so I made this and went ahead and drained the kidney beans and did not drain the black beans. It was delicious! I sauteed off my carrots, garlic, celery and onion first for like 5 minutes then threw everything else in. This was some good soup and I will hold on to this recipe forever! Thanks Chefmeow! I can't wait to try this..I recently stopped buying canned soup because of the msg and bean with bacon has always been a favorite!! I usually make cheese quesidillas with it, I'll definitely try it with cornbread though, yum!! Thank you for sharing!!
