Left-Over Laydown

    Maybe this just happens to me, but I'm betting not. You make a dish that you really enjoy but there is just too much left-over to keep enjoying it. This happened to me with myMadras Lentils Over Spaghetti Squash. I loved it, enjoyed, shared it with family and I'm still looking at two cups that my over-flowing freezer doesn't want to accept.

    The challenge Left-Over Laydown make that great ingredient new again. I'm declaring my leftover is the Madras Lentils Over Spaghetti Squash and I will laydown a new recipe that makes them totally new and still as yummy.

    If you choose to accept, rush to your refridgerator and pick out one special ingredient to declare. Then post your new Left-Over Laydown recipe for us all to admire and be inspired to waste not want not creatively.

My first thought is some kind of burrito-like thing. There's also half of an acorn squash I forgot to steam tonight, and some leftover mashed potatoes from the stew. Hmmm, maybe combine those. We'll see.

    this is one I'm gonna prolly have to sit out... we don't really have leftovers much, around here... I feed teen nephews and cowboys! :) And, if there are, we're fine eating just them, again, because we don't eat them two days in a row.... Friday is pretty much clean out the fridge for the weekend cooking, night... and by then we're happy to have a bite of something, again, from earlier in the week...no need to reinvent!

    Doug sounds like you have some great ingredients. I believe I'm going to turn my madras lentils into some meatballs. Tis the season to have hordeurves available and those should fill the bill. Just debating with myself of what sort of gravy to float them in but that is a whole different thing.

    Okay its done and baking in the oven. Madras Turkey Mix I made a slider from the mix for my lunch to make sure it would hold together properly and check the seasoning levels. I sprinkled a bit of salt but that was it. Although the slider held together just fine I decided to add a cup of bread crumbs as I was going to make the mini loafs with it and wanted some extra assurance.

The acorn squash flavor comes through surprisingly well in the crust. Kind of a sweet flavor, went very well with the stew. I was thinking of curry-izing the stew but DAMB! - couldn't stand to violate that flavor and risk ruining it. Thanks again, gourmetana!

    Okay, got one for you. Turnip gratin that "broke" Didn't use whole cream, used half and half and I have a nearly full casserole of watery turnips with some parmesan and butter flavor. Huge disappointment..

    Love the meatball solution. The acorn squash, meat combo sounds noteworthy too.

    Dice and fry some bacon. remove bacon when done. Pour off most of the bacon drippings. Add juliene colorful collection of bell peppers, sliced mushrooms, sliced or juliene zucchini, chopped green onion or sliced red onion, minced garlic or garlic powder and add to the bacon drippings. Add a half cup to 3/4 cup depending on how many veggies you have, of liquid. I'm thinking chicken broth or wine. Cook stirring often until veggies are fork tender. When the liquid is almost gone, add the turnips, bacon and adjust the seasonings to your liking and cook until the turnips are hot. Serve it over garlic/buttered pasta topped with some parmasaen cheese.

    Great job Christine. I have been fun with the Thanksgiving leftovers also. I put up a pot of stock from the carcass then made turkey rice soup with carrots and celery. Just a simple soup but satisfying. Right now in the oven I modified this quiche recipe Swiss Cheese And Mushroom Quiche and added some turkey to it. Smells great! Unbelievably I still have turkey left!

You make a casserole out of a little bit of everything left over from dinner. Any one ever heard of something like this. Or ideas oh how to construct one. Happy eating.

    Better late than never, Otterpond...I finally came up with a recipe that uses a leftover ingredient from a recipe that I made and posted on GR. Yesterday I made Vermont Maple Syrup Pork Chops Vermont Maple Syrup Pork Chops and tonite I made Savory Empanadas Picadillas Savory Empanadas Picadillas
    with one of the leftover pork chops.
    I'm thinking that the Empanadas recipe might also qualify for the Hand Lunchables challenge...guess I need to wait and see how they hold up after a nite in the fridge.

    @Otterpond... Egads, might ya have a bit of Canadian in ya dearie? I enjoy the root, too, but the only other folks I know who get that ramped up about horseradish are from the northern hinterland or love someone who is!! teehee And I love every one of 'em!! I'm told that's one of the ways they keep warm during the cold spell (which prolly lasts from September to July).
