How to make it

  • 1. Combine first 6 ingredients in a bowl; stir well. Add scallops, stirring gently to coat. Cover and marinate in refrigerator 1-2 hours, turning occasionally.
  • 2. Remove scallops from bowl, reserving marinade. Cut each slice of bacon into 2 pieces 1 bacon piece around each scallop. Bacon might only wrap halfway around scallops if they are very large. If this is a problem lay the bacon on a cookie sheet and stretch it slowly.
  • 3. Thread scallops onto 4 (12-inch) skewers, leaving some space between scallops so bacon will cook.
  • 4. Place skewers on a broiler pan coated with cooking spray; broil 8 minutes or until bacon is crisp and scallops are done, basting occasionally with reserved marinade (cooking time can vary greatly depending on the size of the scallops.)
  • 5. Serving Size:3 large scallops.

    Heck, don't sweat the small stuff. If you don't have liquour then leave it out. They will taste different but still taste good.

    Or, buy a 1/10 pint bottle of bourbon. Use it. the alcohol evaporates during the cooking so all you get is the woody flavor.
