Scallops wrapped in bacon and marinated in a bourbon & maple syrup sauce. This can also be done on the grill!

  • 3 tablespoons bourbon
  • 2 tablespoons maple syrup
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon Dijon mustard
  • 3 tablespoons minced green onions
  • 1/4 teaspoon pepper
  • 12 large sea scallops
  • 6 slices bacon
  • Cooking spray

Directions
  1. 1. Combine first 6 ingredients in a bowl; stir well. Add scallops, stirring gently to coat. Cover and marinate in refrigerator 1-2 hours, turning occasionally.
  2. 2. Remove scallops from bowl, reserving marinade. Cut each slice of bacon into 2 pieces 1 bacon piece around each scallop. Bacon might only wrap halfway around scallops if they are very large. If this is a problem lay the bacon on a cookie sheet and stretch it slowly.
  3. 3. Thread scallops onto 4 (12-inch) skewers, leaving some space between scallops so bacon will cook.
  4. 4. Place skewers on a broiler pan coated with cooking spray; broil 8 minutes or until bacon is crisp and scallops are done, basting occasionally with reserved marinade (cooking time can vary greatly depending on the size of the scallops.)
  5. 5. Serving Size:3 large scallops.

Oh, Heavens, Doug, I'm glad my local has the under 20 ct on sale this week. I love bourbon maple salmon, now you go and add bacon to a scallop. I'm so there, my friend. YUM.

You're funny about it being so easy! These do look good but I never have any liquor in my house....Jett


Heck, don't sweat the small stuff. If you don't have liquour then leave it out. They will taste different but still taste good.

Or, buy a 1/10 pint bottle of bourbon. Use it. the alcohol evaporates during the cooking so all you get is the woody flavor.


Very similar to one I use and it's a family favorite. I know it's a 5 !!!!
