Broiled Scallops with Bourbon Sauce

- 3 tablespoons bourbon shopping list
- 2 tablespoons maple syrup shopping list
- 2 tablespoons low-sodium soy sauce shopping list
- 1 tablespoon Dijon mustard shopping list
- 3 tablespoons minced green onions shopping list
- 1/4 teaspoon pepper shopping list
- 12 large sea scallops shopping list
- 6 slices bacon shopping list
- cooking spray shopping list
How to make it
- 1. Combine first 6 ingredients in a bowl; stir well. Add scallops, stirring gently to coat. Cover and marinate in refrigerator 1-2 hours, turning occasionally.
- 2. Remove scallops from bowl, reserving marinade. Cut each slice of bacon into 2 pieces 1 bacon piece around each scallop. Bacon might only wrap halfway around scallops if they are very large. If this is a problem lay the bacon on a cookie sheet and stretch it slowly.
- 3. Thread scallops onto 4 (12-inch) skewers, leaving some space between scallops so bacon will cook.
- 4. Place skewers on a broiler pan coated with cooking spray; broil 8 minutes or until bacon is crisp and scallops are done, basting occasionally with reserved marinade (cooking time can vary greatly depending on the size of the scallops.)
- 5. Serving Size:3 large scallops.
