How to make it

  • Preheat oven to 350F.
  • Meanwhile, oil a loaf pan and line it with grease-proof paper.
  • Whip up the whites with a dash of salt until soft peaks form.
  • Slowly add sugar and whip up until the sugar has dissolved and the mixture is glossy and smooth.
  • Fold in flour, being very careful, and then fold in the nuts until JUST combined.
  • Spoon the mixture out into the tin and bake for 50 minutes (golden brown when done).
  • Remove from oven and let cool.
  • Preheat your oven to 250F and cut your bread into super thin slices (see picture) with a bread knife.
  • Place the slices in a single layer on a good sized baking tray lined with grease-proof paper.
  • Bake this for 50 minutes (or until completely dried out).
  • Let cool for 20 minutes and then store it in an airtight container.

    I heard on The Splendid Table podcast yesterday that people who eat 3 to 4 oz. of nuts 3 to 4 times a week live longer! That seemed like a large amount 9 to 16 oz. of nuts a week BUT a great reason to make this bread!

    it looks like biscotti but it is not. this bread is getting famous in malaysia as festive cookies. did try amother similar recipe but it didn't turn out as i expected. anyway, i'll try this soon...

    This certainly does sound wonderful! If someone tries this recipe with a different kind of nut please post and let us know how it turned out.

    An approximation of Castor Sugar can be made at home by processing granulated sugar in the food processor for a minute or two. Let the dust settle before you take the top off.

    Hi Ivy,

    I wanted to let you know there is a place here in the United States who sells nuts. http://www.nuts4u.com/ They do send nuts out to any country. I send them to my sister in Ireland and my aunt who lives in UAE Saudi Arabia.

    The best price is their Flat rate international. Still not cheap but for $37.00 US Dollars you can get 8 to 10 pounds of nuts shipped to you. Macadamias would be a reasonable nut to ship as they are light nut.

    Caster sugar can be substituted, you can use white sugar.

    Hi, I like this recipe because I often have egg whites and don't know what to do with them. However, I have a slight problem. We do not have macadamias in Greece. Can u suggest any other nuts? And caster sugar can this be substituted with white sugar?
