Slap Your Mama Texas Chili Recipe
This isn't your everyday chili recipe, this chili will make you slap your mama! ( or me )

Ingredients
  • 2lbs. Course Chili meat or ground beef
  • 1lb. ground pork
  • 1lb. ground Italian sausage
  • 24oz. Mexican Chorrizo sausage
  • (2) 12oz bottles Shiner Bock Beer ( use what you like to drink) or 750ml Zinfindel
  • 2 Jalapeno peppers chopped ( or more depending on where your are from )
  • 2-4 tbsps. of chili powder
  • 4 cloves crushed garlic
  • 1 tbsp. finely chopped green onions
  • 1 tbsp. black pepper
  • 1-3 tsps. dry oregano
  • 1 tbsp. cumin powder
  • 1 tbsp. salt
  • 1 16oz. can of tomato sauce ( your choice )
  • 1 tbsp. finely chopped green bell pepper

Directions
  1. Mix well all the meat in a large pot and brown( CUT OPEN ALL MEAT CASINGS and squeeze out)
  2. Mix well until done
  3. Add tomato sauce, beer or wine, and all the seasonings
  4. Cook over low - medium heat for 30 min. stirring occasionally to advoid sticking
  5. Then reduce heat to low and cover and cook 1 hour more
  6. Stiring occasionally
  7. Sample, sample and sample
  8. Add more whatever you think it needs ( you make the call )
  9. Turn heat off and let cool
  10. Place in the refrigerator over night ( yep over night )
  11. Reheat the next day and serve it your way!
  12. Eat one spoon full and slap the person next to you and say " Boy was he right"
  13. Enjoy!

This is funny!! the seasoning that I use it called Slap yo mama...it is made by Tony Walker and his sons from Ville Platte,La. If you get a chance try it...really good stuff...Your recipe sounds dishish!! will try it.....thanks again for wanting to be cooking buddies....

It's getting to be about that time for a good pot of chili...its almost a staple in my house, for the colder months. Since we do like Shiner, no need to run out for it. :-) Thank you for posting this! It sounds wonderful..BTW if you freeze the sausage and just start to defrost, the skin peels right off with no trouble at all!!
