Ingredients

How to make it

  • Remove the skin from the Chorizo and drop it into a small pot
  • Cook over medium-high heat until the Chorizo is fully cooked (stirring and breaking up the meat)
  • Stir in the refried beans and mix completely
  • Remove from heat
  • Cook the bacon until just crispy and drain on paper towel
  • Crack an egg in a saute pan (breaking the yolk) and season with salt and pepper
  • Flip the egg and cook through
  • In a large skillet over medium heat warm a tortilla about a minute a side
  • Remove tortilla from the skillet and lay on the counter or a cutting board
  • Spread a spoonful of the Chorizo/Bean mixture on one half of the tortilla from one edge 2/3 of the way down
  • Sprinkle cheese on the bean mixture
  • Lay the fried egg on the cheese
  • Place two pieces of bacon on the egg
  • Spoon on salsa
  • Spoon on sour cream
  • With the side of the filled half of the tortilla toward you, lift the filled side and fold it over on itself pulling back gently to pack the fillings in a roll. Fold the unfilled bottom 1/3 up towards the center of the tortilla and continue rolling into a tight single open ended burrito. (you will get the hang of this if you are not a regular roller)
  • Start at the open end and enjoy!

    I made this for our out-of-town guests and we all really enjoyed it. The chorizo/bean mixture needed just a touch of salt and pepper before being layered with the remaining ingredients. Very filling. Thanks for the post.

    Hey, chicken chorizo? At TJ's? We have one near us - must look for that...sounds like a great way to cut out SOME of the fat, but chicken or not, this burrito sounds killer good and I can't wait to try it!

    Try to find the fresh chorizo as the stuff in the plastic tube is pretty awful. I buy the chicken chorizo at Trader Joes. It's excellent.
