Ingredients
  • 1/4 cup butter (1/2 of a stick)
  • 1 large Georgia Vidalia Onion but I'm sure a Washington Walla Walla would work too! ;)
  • 1 (8oz) package of cornbread/muffin mix
  • 1 beaten egg
  • 1/3 cup whole milk
  • 1 cup sour cream
  • 1 cup grated sharp cheddar cheese...OH YEAH
  • 1/4 teaspoon salt
  • 1/4 teaspoon dried dill weed =)
  • PREHEAT OVEN to 450 degrees F. Spray an 8-inch square baking pan with vegetable oil cooking spray.

Directions
  1. In a medium saucepan, melt the better and saute the onion until tender but not browned, for about 3 minutes.
  2. Remove the pan from the heat and add the muffin mix, egg, milk, sour cream, 1/2 cup of the cheese, the salt, and dill weed. Stir to combine.
  3. Pour into the prepared pan and top with the remaining 1/2 cup cheese.
  4. Bake for 30 minutes, until set and a toothpick inserted into the center of the cornbread comes out clean. Allow to cool slighty before cutting into squares.

Ohhhh, shoot! this makes me slobber like my old boxer hound:-) but i cannot make it, can't get cornbread mix here. i wonder if i could use corn meal ( i have a hand mill, could set it to coarse?) and yeast? i would really appreciate if you could help - i ADORE corn muffins, corn bread, corn anything

OK made this one last night for the "girls". I substituted Asiago cheese for the cheddar. What a fantastic, moist, rich cornbread. I even had it for breakfast this am. Amazing and no fail.

Cornbread was good but not what I expected. It was along the lines of polenta in texture. I was expecting a drier cornbread to sop up the crockpot soup I was making. My bad.
It's still good cornbread on its own merits.

Sauteed the onion in bacon squeezings instead of butter.
