Ingredients

How to make it

  • In a medium saucepan, melt the better and saute the onion until tender but not browned, for about 3 minutes.
  • Remove the pan from the heat and add the muffin mix, egg, milk, sour cream, 1/2 cup of the cheese, the salt, and dill weed. Stir to combine.
  • Pour into the prepared pan and top with the remaining 1/2 cup cheese.
  • Bake for 30 minutes, until set and a toothpick inserted into the center of the cornbread comes out clean. Allow to cool slighty before cutting into squares.

    Cornbread was good but not what I expected. It was along the lines of polenta in texture. I was expecting a drier cornbread to sop up the crockpot soup I was making. My bad.
    It's still good cornbread on its own merits.

    Sauteed the onion in bacon squeezings instead of butter.

    I understand that the two onions you listed and the Texas 10-15 are the same plant grown in different locations.

    ohhhh, shoot! this makes me slobber like my old boxer hound:-) but i cannot make it, can't get cornbread mix here. i wonder if i could use corn meal ( i have a hand mill, could set it to coarse?) and yeast? i would really appreciate if you could help - i ADORE corn muffins, corn bread, corn anything
