Ingredients

How to make it

  • Split Pita into 2 halves, brush all sides with Olive Oil.
  • Toast in a 300F oven until golden and crisp. Break into small pieces.
  • Remove the whole seeds from half the pomegratate and toss in a bowl with all the salad ingredients.
  • Use a Mortar & Pestle to crush salt & garlic into a paste. Add to a jar with the remaining dressing ingredients and shake to combine. Pour over Salad.
  • Squeeze juice from the other half of Polmegranate over salad and mix well.
  • Fold bread pieces into salad immediately before serving.
  • Garnish with whole mint or parsley leaves.

    I made it! Had to sub watercress, and didn't have any Pomegranite, but even without it was so good! I also tried it on a pita with some hummus and tzatziki for a sandwich, and it was AWESOME! Thanks for the recipe, one of my new favorites :)

    I will try this. I would have to sub watercress for the purslane - I'd have to hunt around to see if I can find someone who supplies that - growing your own seems like a good option! Thanks for the recipe!

    I totally forgot about this dish... my mom used to make all the time, but never with Pomegranate... I never liked my bread soaked I liked it crunchy so she always put mine on the side :-) ... I'm soooo glad I stopped by your page otherwise I wouldn't remember this recipe...

    Fresh Pomegranate Mmmm I have a few at home to try with this recipe.! I love this salad with home made pita chips. The addition of Purslane sounds wonderful to me.

    Hey Jim hon - I made this on Sunday and (alas!) I don't have access to pomegranates this time of the year and I had to sub watercress for the purslane - but I did get some great-looking organic watercress. (I have ordered purslane seeds and will have my own purslane stash in time. Yep.)

    Anyway, this is a stellar salad, m'dear. That dressing is so wonderful and everyone had a fit over the combinations of flavors. Divine. I made with your Baked Stuffed Kibbee (for the second time) and your sister's recipe for Za'taar Bread (see Jim's recipes for both) and it was all so perfect. I wish I could give you another 5 forks, but darn...they just won't let me. I can't wait to add the pomegranate to this party. Thanks so much! ;-)~ Vickie
