How to make it

  • Set oven at 150 degrees Celsius. Remove base from loose bottom cake tin and line the inside with a double layer of kitchen foil. Replace bottom in tin.
  • Put all ingredients into a large mixing bowl and stir with a whisk till there are no more lumps. Hold down bottom of cake tin with whisk (see picture) and scrape cheese mixture into tin.
  • Remove whisk and put mixture filled tin into a roasting pan. Half fill the roasting pan with warm water and put the whole set up into the oven.
  • Bake for 1 hr 15 mins then turn off oven. Open door slightly and leave cheesecake inside for 2 hours. Remove from oven and chill for at least 6 hours.
  • Using the foil overhang, gently remove cheesecake, slowly peel off foil and transfer to a platter. Serve as is or with your favourite chocolate or fruit sauce, or your favourite fruit compote on the side.

    Hey, perfect! My mother makes cheesecake with no crust - always has - so the whole graham cracker crust thing has always seemed wrong to me! Giving this a 5 to encourage all the other purists out there!

    I want to thank you all for your lovely comments and ratings and you know I must be one hell of a photographer or that cheesecake must be super photogenic cos it keeps coming up that this cheesecake ain't ugly lol Believe me, after you've peeled off that foil you'll agree with me - this ain't no pretty cheesecake LMAO God bless and y'all have a great day.

    Sorry if anyone's confused about the amounts for this recipe - we only get one size here, both for cream cheese and sour cream. I'd meant to keep things encouragingly and invitingly simple for beginner bakers but thanks for bringing this to my attention :) I've amended the recipe to make it clearer.     Sweetie, what size tub are you using? We have little ones and big ones. I'm guessing the large ones by the size of the picture but it could confuse some of the less experienced cooks. I like the idea of no crust sometimes, except when it is a nice nutty crust like Ahmed makes for his cheesecakes. Love the name of this and it isn't ugly, it is beautiful. Worth a high five from me. Hugs.

    I have some family that can't have wheat, and I never really thought of a cheesecake without a crust. Sounds like it works though! And sounds easy enough to make without a special occasion!!
