Ingredients
  • 8 ounces of medium sharp cheddar cheese, grated - do it yourself and do not use the pre-grated cheese
  • 6 ounce jar of diced pimentoes with juice (but pick out the seeds)
  • Mayo - about 3 heaping tablespoons
  • Black pepper, to taste
  • Celery seed, 1/4 teaspoon
  • Dash of hot sauce

Directions
  1. Grate the cheddar into a large sturdy dish with low sides (so you can easily do the mashing and mixing);
  2. Dump the contents of the jar of pimentoes on top of the grated cheese;
  3. Using a fork, mash the two ingredients together until very well mixed;
  4. Add mayo and mix (add more if it seems dry);
  5. Add seasonings - black pepper, celery seed, hot sauce and mix some more;
  6. When everything is mixed, transfer to a storage container with a tight lid; it'll keep in the fridge for a couple of days;
  7. Now you're ready to stuff lengths of celery as an appetizer, or use as a spread for crackers, or use to make a sandwich!

What a great recipe. Can't wait to try it.

I'm with edenson, this one sounds too good to pass up. Thanks for sharing.

Wonderful......

Tried your recipe this week - it's great! Chefjeb uses 1 cup Velveeta in his recipe, so I put that in, and it turned out really good.

Have been wondering how this was made - saw it on the food channel - can't say this is a Minnesota meal at all! Thanks for the recipe - sounds good to me!

I love pimento cheese and this version is awesome. Really nice and my lunches will be much better at work next week. Thanks.

Grew up on this stuff! Absolutely love it, thanks for reminding me, I'll make it soon! Ever added some grated hardboiled eggs, and a little sweet relish? Delish!

I love pimento cheese but have never tried making it. I even like the storebought stuff so I know this has to be great. Can't wait to try it! Thanks

Hmmmm.. I'll have to try it with the hardboiled egs and relish!

This is the way I make mine, hubby loves it, so I know it's a 5!! Thanks for the post

Love this, it is one of my alltime favorite lunches or snacks.

I have loved pimento cheese since I was a kid. I'm still a sucker for the little jars put out by Kraft. I get freshly made stuff at the supermarket now, but it's expensive. I'm going to try this recipe. Thanks!

Great recipe....there is nothing like home made "paminter cheese"! A true Southern delight...right down to the "heaping" tablespoons full of May!

Oh how much I've missed this. I'm going to go make it now! Thanx! (I see we have a pimento cheese club starting here!)

Additional comment 24 March: All my friends here in the Isle of Man absolutely LOVE this. I've added 1 Tbsp Worcestershire Sauce and it really tastes great!

I have loved this since I was a kid also. I put a bit of Mircle Whip in mine for that twang.

My daughter wants me to make this for her son's first birthday party. Glad I found the recipe, Thank you!

I think this is very good and easy!

My gramma used to make me these sandwiches when i'd visit her in the US. I didn't know it was so easy to make at home! Thanks so much for posting this. :)

Oh thank you so much! This recipe brought back my childhood. Now I just need to find some of those cute lil jars to store this in!
