While living in Germany, I learned how to make my own Spatzle, and I love it! Hope you give it a try.. this is the best recipe I've used.

Ingredients
  • 3 cups of all purpose flour
  • 1/2 teaspoon of salt
  • 1/4 teaspoon ground nutmeg
  • 4 eggs
  • 1 cup of milk
  • (Butter for frying and herbs of your choice)
  • Olive oil for tossing after boiling.

Directions
  1. Combine flour, salt and nutmeg. Add eggs and mix. Pour milk into the dough little by little, until a smooth batter forms, slightly thinner than brownie batter. Let rest at least five minutes. Bring two quarts of water with 1/2 teaspoon of salt to a boil in a heavy 4-5 quart pan. Plan on boiling at least two batches from this recipe.
  2. Set a large colander, one with large holes, over the saucepan and press the dough, a few spoonfuls at a time, through the holes directly into the water. Boil for 5-8 minutes until the noodles are tender to the bite. Remove noodles with a slotted spoon and place in cold water then drain a little longer in a sieve or mesh strainer. Toss with a little olive oil. When ready to use, heat a skillet and place butter or margarine in the skillet over a medium high heat. Add spatzle and saute, until golden on the edges. Serve with gravy, put in soup or add butter and herbs. Tip: A variation is to add herbs to the spatzle after it is cooked, such as parsley, chives, thyme, sage, or nutmeg. Salt and pepper spatzle to taste. Spatzle can be prepared the day ahead of serving, but toss it well with oil and refrigerate. Then when ready to use, do the skillet process.

I have been looking for a recipe like this for a lng time and here you have it. thanks, will be trying this soon. i bet this would make a wonderful side dish. thankyou shirley p.s. we always go to the German festival in new orleans sadly they don't serve spaetzel. had this dish at disney world when my girls were 4 now they are 24.

I LOVE spaetzle! I was unsuccessful at it for years until our German Exchange student, Wolfgang, showed me how to do it right. Your recipe is very similar to his family recipe. I know it's good!

Shirley, the same dinner party I served the olive cheese balls I served German food...spaetzle, rouladen and red cabbage. Everyone really loved the spaeetzle and the gravy from the rouladen! Good post!


I 4got to tell you, that I did use a spaetzle maker and when researching spaetzle on the internet found many recipes with varying proportions of flour and egg. I also let the dough 'set' for several hours before cooking. I think the nutmeg is an important ingredient in this recipe.

Hey Shirley girl! Have never made Spaetzle myself, but have had them at a local restaurant Gasthaus Gutenberger, where they serve delicious Spaetzle with Wienerschnitzel und Jaegersosse und Rotkohl und solche gute Dinger! Have to give this a try 'cause I think the whole family will love it!
