How to make it

  • Bring large pot of water to boil with potatoes (I don't know the lbs.) I just measured by putting them (prior to cutting/cooking) in the 9x13 dish to see how many would fit. I think about 15 or 20 depending on size
  • Boil potatoes until firm fork tender, about 10 minutes (check before 10)
  • Drain potatoes and put in large bowl ( or back in the pan used for boiling)
  • Mix soup, sour cream, cheese, ham, mustard, and seasonings (except paprika)
  • Add to potatoes
  • Spread into lightly greased 9 x 13 dish, sprinkle with paprika
  • Bake in preheated 350 degree oven approximately 45 minutes till bubbly
  • I served with green beans, a complete meal!

    I'm thinking that this would be a pleasant change for when I'd normally made scalloped potatoes. For as much as I like variety, I repeat the ole' favorites too often. Lately I've been breaking out of that cycle. Thanks for a new idea for me!

    Oh Donna, these spuds sound just delicious! We love the small red potatoes and done like this, sounds like heaven! Yes, it would certainly be a meal for us! I've got everything in the fridge, think this'll be our supper tomorrow night. Oh! Except that tomorrow I was going to make your Pollo Verde again! Decisions, decisions!

    Question: How many potatoes did you use? Just so I don't get it too dry (I hate that).
