Ingredients

How to make it

  • Rinse and pat dry meat then season with salt and pepper.
  • Place in slow cooker and pour over salsa and black beans.
  • Cook for 4-6 hours on low, depending on your cooker, until meat is able to be shredded. Shred meat carefully and add cream cheese. Cook on high until just melted and combined. Serve wrapped in warm tortillas, burrito style or over nachos or rice.
  • *the heat on this can easily be adjusted by the type of salsa, as well as the addition of sliced hot peppers, if desired.

    I made this for dinner today using Newman's Own black bean and corn salsa, and with some diced jalapenos. It was delicious!

    What a great recipe! I always wondered how to get shredded chicken for various recipes. I wonder if you can use this method with just chicken broth (for non-Mexican inspired recipes)? Anyway, I used the filling for baked enchiladas & it was just wonderful. Thanks!

    This was excellent! I made my own salsa and when filling the burrito I added some topped cilantro on the mix. After folding I added some cheese on top then cooked in the oven for about 5-10 minutes to get the cheese melted and crisp up the tortilla a bit. Then topped with more salsa and cilantro! S.C. on top would be great too...though I was out :(. Anyway, another great recipe Keni!

    i made this to heat up for quick lunches since we are moving. i used pork and i had some leftover salsa in the freezer to use up. it was very satisfying for what little effort was involved. thank you for such an easy and inexpensive recipe. we used it as a burrito filling. next time i will add some potato or rice to the filling. yum.
