I made this to heat up for quick lunches since we are moving. i used pork and i had some leftover salsa in the freezer to use up. it was very satisfying for what little effort was involved. thank you for such an easy and inexpensive recipe. we used it as a burrito filling. next time i will add some potato or rice to the filling. yum.

This was excellent! I made my own salsa and when filling the burrito I added some topped cilantro on the mix. After folding I added some cheese on top then cooked in the oven for about 5-10 minutes to get the cheese melted and crisp up the tortilla a bit. Then topped with more salsa and cilantro! S.C. on top would be great too...though I was out :(. Anyway, another great recipe Keni!
