This is a really rich asparagus lasagna made with bechamel sauce, pest and fontine cheese. WARNING: this is very rich!!!

Ingredients
  • 5 tblsp. butter
  • 1/2 cup flour
  • 4 cups warm whole milk
  • 1/2 tsp. + 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 2 tblsp. olive oil
  • 2 lbs. asparagus
  • 2 coves garlic, crushed
  • 1 lb. no boil lasagna noodles
  • 1 container prepared pesto
  • 3 cups fontina cheese
  • 1 cup parmesan

Directions
  1. Preheat oven to 450 degrees.
  2. Put asparagus on baking sheet.
  3. Drizzle with olive oil, add garlic and 1/2 teaspoon salt. Toss to coat. Roast 25 minutes.
  4. While asparagus is roasting make bechamel sauce.
  5. Melt 5 tablespoons butter in medium saucepan over medium heat. Add flour and whisk until smooth.
  6. Gradually add milk, whisking constantly until thickened. (Do not boil) Remove from heat, stir in 1/2 teaspoon salt and pepper.
  7. Preheat oven to 400 degrees and grease 9x13 dish.
  8. To assemble, spread 1/2 cup bechamel sauce on bottom of dish. Arrange a layer of pasta, then a layer of pesto. followed by a layer of asparagus, and another layer of bechamel.
  9. Sprinkle with fontina and parmesan.
  10. Repeat layers ending with a layer of pasta coated with bechamel. Top with fontina and parmesan. Bake 20 minutes or until cheese is melted and bubbly.

This is so very good! The only change I made was to use 2lbs of spinach instead of asparagus, because my kids won't eat asparagus. I sauteed the spinach in the olive oil and the garlic. Then I followed the directions exactly as written. I will definitely be making this again! 5 Forks!!!I hope you like my photo!
