UPDATE:I made these at lunch, today, and since the recipe is a bit subjective, I took the liberty of doing it this way:cooked down about 8oz fresh spinach in a bit of olive oil and garlic. Used 1/2 cup each of Italian blend and cheddar cheese and added fresh ground pepper and sea salt(a fair bit of each, as rice needs it, in my opinion), and just a hit of hot sauce. Then, I made them in my mini muffin tins so they were just bite sized. Very good and were a hit everyone, young and old. :)

This sounds delicious! I'm presuming the 1/2 bag of spinach means fresh, cooked down and drained! But even if it wasn't; you can't tell the difference between cooked spinach and cooked spinach once it's thawed and drained and mixed with rice! A must try!

I made these tonight and though they didnt look as nice as Keni's they sure were good! I used mozzarella and parmesan and I only had 1/2 bag of fresh spinach that I cooked so they needed some more spinach but were still really tasty. I will definitely be making these again!

I made this tonight and they were very good. I combined the seasonings, spinach and cheeses then tasted it to adjust the seasonings. Then I added all the other ingredients. I doubled everything except the rice, because I wanted it to have a strong spinach flavor, and it did. I think I will add some cooked bacon next time. This filled 9 muffin cups, which was perfect for my family of 4.
