My own creation which is a rich, filling twist on a stuffed chicken Florentine. This would be good with rice or pasta, but it's decadent with potatoes, using the sauce in place of gravy. Cook time includes stove top and oven cooking.

Ingredients
  • 6 boneless, skinless chicken breasts, rinsed and patted dry
  • 6 strips bacon
  • 1 stick butter, divided
  • 2-3T olive oil
  • 3 cloves garlic, minced
  • 1 small onion, chopped
  • 8oz mushrooms chopped(rather than sliced)
  • 1/2lb fresh spinach, roughly torn
  • 1 1/2 cups 1/2 and 1/2
  • 1/2 cup white wine or chicken stock
  • 2T cornstarch*****
  • 1/2 cup Parmesan cheese, shredded or grated
  • salt and pepper

Directions
  1. Salt and pepper both sides of chicken and wrap each breast with a piece of bacon, securing with a toothpick.
  2. In skillet, lightly brown chicken in olive oil, about 5 minutes, each side, depending on thickness.
  3. Meanwhile, in another, larger, pan, melt butter(6T) and add onion, garlic and mushrooms.
  4. Cook about 5 minutes or so, until veggies are just tender.
  5. Add cornstarch to make roux(so cook and stir until thick and bubbly)
  6. Add wine or stock and cook about 3 minutes, until slightly thickened.
  7. Add 1/2 and 1/2 and stir to combine.
  8. Add spinach and cheese and cook another few minutes just til spinach cooks down slightly and cheese melts.
  9. Place chicken breasts in sprayed or buttered(why the hell not! ;) glass 9X13 dish and carefully pour sauce over them.
  10. Bake at 350 for about 30 minutes, or until chicken reaches 160, internal temp.
  11. Let rest for a few minutes for chicken to cook a bit more and sauce to thicken.
  12. Serve with rice, pasta, or, as we did, with mashed potatoes.
  13. ***Please note that we think water logged chicken is the culprit to why a couple of the dishes have come out thinner sauced... if you're concerned about this happening, simply up the cornstarch. It won't hurt it to be thicker! :)

Bravo, Bravo!!! This looks and sounds absolutely delicious (and I'm already stuffed) I like it better than having to try and stuff the damn chicken breasts. I am definitely saving this one for this week possibly. Great pic too!

I made this for dinner last night and my husband and I just loved it! Served with mashed red bliss potatoes....delicious! Thinking about attacking the leftovers right now! YUM!

Well it was as great as most people said. I did add more spinach; wanted more Florentine and about another 1/2 cup of wine. Otherwise perfecto my dear, thanks for the help. I told them about the response to my "Chicken Recipe" Appeal and now they do not so feel so overwhelmed and that all chicken is boring. Thanks everyone for your recipes.


Well Keni, I did it, I made this FINALLY! It was very good! I made it exactly as you stated as far as ingredients, but I did cube the chicken and brown with chopped bacon (cause that's how hubby prefers things) but the taste was the same. We had with penne pasta. Just finished. Hubby is still eating his. A real winner! I will post my pic under step-by-steps. ;')

Forgot to say, my dish is smaller because I halved everything - used only 3 breasts because there was just 2 of us. (Tired of so MANY leftovers in the fridge)


Keni...this was so good.I followed the recipe to a T just halving the recipe. I served mashed potatoes with this and did as suggested by Keni and pouring the sauce over them which was BRILLIANT! The aroma of this is sooo wonderful and I couldn't get enough! Thanks Keni!


I LOVE chicken florentine but usually make a mess trying to stuff the breasts! I've never even thought of doing it "unstuffed"! I'll be trying this before the week's out.


I see that I had previously rated your recipe, Keni, but forgot to comment. I do apologize for that. However, I'm back again to let you know that this was outstanding! I halved the recipe and made it yesterday, with leftovers for this evenings meal. I subbed for turkey bacon. A really delicious meal, with mashed potatoes on the side. Thanks for sharing your wonderful recipe!

It is hard for me to rate this because of either my error or the spinach or chicken giving up to much water. My sauce was perfect until it was baked with the chicken...and it turned somewhat watery....YES...it definately did thicken upon standing. The flavor was AMAZING!!! My whole family really enjoyed this one and had seconds. My daughter said this tasted like "restaurant" food! So that is a huge compliment. So I am giving this 4 forks because of my mini mis-hap. Otherwise a perfect 5 forks for flavor, tender chicken, and the fact that it tastes like you slaved in the kitchen and you didn't. Will most definately make again! Thanks Keni! ;)

I FINALLY made this! Wonderful! I almost scrapped it when I realized I had thawed out chicken tenders instead of breasts, but they worked fine! Instead of wrapping in bacon, I chopped the bacon and cooked it with the chicken. Only had fat free half and half on hand and that worked fine too. Served over whole wheat spaghetti - delicious! Thanks Keni!
