Scampi Baked Potato

- 1 tbls. olive oil shopping list
- 2 baking potatoes shopping list
- 8 medium-large shrimp, peeled and deveined shopping list
- salt and pepper, to taste shopping list
- 4 tbls. parmesan cheese, grated shopping list
- garlic butter shopping list
- 1 tbls. olive oil shopping list
- 1 small shallot, finely chopped shopping list
- 1 large clove garlic, finely chopped shopping list
- 1 tbls. chives, finely chopped shopping list
- 1 tbls. parsley, finely chopped shopping list
- 1 stick butter, softened shopping list
- salt and pepper, to taste shopping list
How to make it
- Preheat oven to 350
- Wash potatoes
- Poke holes with a fork into potato
- Bake for about 45 minutes or until potato is tender
- Garlic butter
- Heat olive oil in a medium pan
- Add shallot and garlic and saute until tender
- Remove from the heat and cool
- In mixing bowl, mix butter, shallot and garlic, and herbs
- Season with salt and pepper
- Cut warm potatoes in 1/2
- Scoop out potato to 1/4 in. with a spoon
- Put excess potatoes in a bowl and keep warm
- Put shrimp in the potato boat in a layer
- Spoon 1-1 1/2 tbls. garlic butter over shrimp
- Add remaining butter to saved potato and mix together
- Put over shrimp in a mound
- Sprinkle Parmesan cheese over potato
- Return to oven and bake until heated through and cheese makes a golden crust, about 20 minutes
