Smoky Mountain Chicken My Way

- Bottle GOOD BBQ Sauce, like Sweet Baby Rays or Sticky Fingers (savory, NOT Sweet or honey bbq) OR your homemade sauce shopping list
- ** If not homemade sauce: will need zest and juice of a lemon wedge, 2 T minced onion, a few drops liquid smoke, 2 T worcestershire, 1 T margarine and 2 T Jack Daniels or 2 T beer, if desired - I use JD ** shopping list
- 4 large boneless skinless chicken breasts shopping list
- Seasoned salt shopping list
- garlic pepper shopping list
- italian seasoning shopping list
- 8 pieces thick cut, peppered bacon shopping list
- 1 c shredded monterrey cjack cheese shopping list
- 2-3 green onions, chopped shopping list
- 1 large ripe red tomato, chopped shopping list
- ***VARIATION*** shopping list
- 1/2 c breadcrmbs shopping list
- 1/4 c parmesan shopping list
- 2 beaten eggs shopping list
- 2 T milk shopping list
- 2 dashes hot sauce shopping list
- 4 large slices green tomatoes shopping list
How to make it
- Preheat oven to 350
- Pour bottled BBQ sauce in saucepan, add lemon juice and zest, onion, liquid smoke, and worcestershire
- Simmer together while preparing chicken
- Rinse chicken and pat dry
- Season both sides with seasoned salt, garlic pepper, and italian seasoning
- Butter a casserole dish and add chicken
- Baste both sides of each peice of chicken with sauce, and bake covered, about 25 minutes - until chicken is just done
- Meanwhile, fry the bacon, drain, and break pieces in half (if you cook the bacon on the foreman grill, clean up is much easier, cuts cook time at least in half if not more, and your grease is already poured in a container)
- Remove chicken, pour liquid from dish - if any - baste each piece of chicken with sauce, cover with bacon and shredded cheese
- Return to oven, and cook uncovered about 10 more minutes
- Serve topped with green onions and chopped red tomato
- **VARIATION**
- Prepare chicken breasts and bacon as above
- Beat together eggs, milk and hot sauce
- In another bowl stir together bread crumbs and parmesan
- Dip green tomatoes in breading mixture then egg
- Fry in hot skillet
- Serve chicken breasts on top of a fried green tomato slice
- Either variation also makes and excellent sandwich, use a nice big roll, that has been butter and grilled on the insides.
- NOTE - You will have sauce left over. It will keep in the fridge for about 3 weeks. If you don't use bbq sauce that often, use half a bottle, and cut the add-ins recipe in half.

This was AWESOME! Made as directed (except I didn't have any green onions so I fried slices from a small white onion) and it was soo juicy and yummy! Hubby scarfed 2 down before I could finish my first. This is definitely going in the "Make again"...more
