- halibut With Grilled pineapple and raisin salsa shopping list
- 1/2 cup raisins shopping list
- 1/2 cup dark rum shopping list
- 1 fresh pineapple trimmed cored and sliced shopping list
- vegetable oil as needed shopping list
- 2 chipotle peppers canned in adobo sauce rinsed seeded and finely diced shopping list
- juice of 1 lime shopping list
- Zest of 1/2 orange shopping list
- juice of 1/2 orange shopping list
- 1/4 cup extra virgin olive oil shopping list
- 1 green onion sliced shopping list
- 2 tablespoons finely chopped roasted red pepper shopping list
- 2 tablespoons finely chopped cilantro shopping list
- 1 teaspoon sea salt shopping list
- 6 halibut steaks shopping list
- 1 tablespoon lemon pepper seasoning shopping list
How to make it
- Plump raisins in rum for 30 minutes then drain well. Heat grill to medium high. Brush pineapple with oil then
- grill until lightly caramelized on both sides. Cool slightly and cut into 1/2-inch pieces and place in mixing bowl.
- In separate bowl combine chipotles, lime juice, zest and orange juice. Whisk in olive oil vigorously. Pour over pineapple chunks then fold in green onions, red peppers, cilantro and raisins. Season with sea salt then set aside. Brush halibut with oil then grill 5 minute on each side turning only once. Season with lemon pepper and serve with salsa.
