This Sauce is Hot and full flavored sweet and tangy. It can be used for Vegetables, scrambled eggs,Chicken nuggets Grilled tuna ,beef, pork, even on Ice cream. My friend enjoyed the sauce in her Bloody Mary!

Ingredients
  • 6 Habenero peppers or more if you like a lot of heat
  • 2 Hidalgo Peppers or Serrano peppers
  • 1 Onion rough chopped
  • 2 Cloves of Garlic
  • 1/4 cup Olive oil
  • 1/4 cup raisins
  • 2 Cups Dark Brown Sugar
  • 1/2 cup water
  • Juice from 2 Oranges
  • 1/2 cup Apple Cider vinegar
  • 2 tablespoons Balsamic vinegar
  • 1 small can tomato paste
  • 3 Tablespoons course ground mustard
  • 2 tablespoons sea salt
  • 3 tablespoons Cumin
  • 1 teaspoon dried Cloves
  • 1 teaspoon dried Coriander
  • 1 Tablespoon dried Chipotle pepper
  • 1 Tablespoon Tamari soy sauce
  • 1/2 teaspoon Old bay Spice

Directions
  1. Start by combining the sugar, water,both vinegars into a small stock pot
  2. Bring to a boil on medium high heat lower heat to medium and let it reduce for one minute.
  3. Add the Raisins the Orange juice and all the herbs and dried ingredients and salt and simmer for about 5 minutes.
  4. Taste and adjust for your likening, remember the heat will come later.
  5. In a separate pan place the onions and 1 tablespoon of Tamari Soy Sauce and cook until onions have browned.
  6. Remove the stems and seeds of the habeneros and the Hidalgo peppers place into a blender and add the olive oil and liquefy until smooth.
  7. Add the Garlic and tomato paste the caramelized onions and half the sauce and blend until smooth and silky.
  8. Continue to add more sauce until it taste rite to you.
  9. Use Tortilla Chips to taste the sauce.
  10. Pour into jars and Process them or refrigerate

Funny getting your email today. I have a political bonfire to go to tonight, and, 5 days ago a few of us were looking for something spicy for the grill meats and I remembered your "gone to heaven and hell" phrase and I bookmarked your recipe. Printed it out, broke out the calculator, and we sort of made a fairly large batch (lots of testing and tasting and subbed serranos for the hidalgos). Altogether we were able to make approx. 2 1/2 gallons. That should take care of this crew. All 3 jars are waiting to be picked up now. Ribs, steak, burgers, dogs, chicken, etc. Hardly anyone who walked in the garage (I was banned from my own kitchen by the wife and kids when they saw the ingredients)to see how we were doing could stay toward the end. Fans were going full bore, gloves, glasses and masks were in place. This stuff is steaming! The taste was fabulous and the attack came a very quick short while later working from the back of the throat to the tongue. I have today off and tested it this morning on some breakfast sausage, tastes like the flavor has enhanced itself quite a bit. In this neck of the woods (and I mean woods we are a rural town God forgot about) heat and flavor is appreciated by almost all, except for the city people or Jersey or Connecticut people that moved here. We even started a trend that is catching on, spicy warm bbq or hot sauce on Ice Cream (most notably pecan or chocolate ice cream is the best). Will advise later tonight or tomorrow how it went over. As far as the 3 amigos that made it, quality stuff! Kudos from all of us.

I'd probably not use so many Habeneros and add some other types of chiles but this would be great with a pork piccadillo-on a tortilla with a margarita...woooooo.


Wow is definitely the word here Michael! It looks very tasty,but I'm not sure I could handle 6 Habeneros. I know,I know. I said I like hot stuff--but 6?!! I will try this one but I may cut back on the heat a little. Thanks for the recipe and spicing up my life! Ha,Ha.


This what I did to come up with the correct amount of heat for me. Use all six Habeneros blend them pour them into a small container. place a tablespoon of blended peppers with the sauce. blend it well and taste using a tortilla chip. wait a minute add more hot peppers and blend well.Give it a minute and add another tablespoon of previously blended hot peppers blend and taste until it is the way you like, a step and repeat process. Remember to remove the seeds and veins first with a pairing knife . ** important ** ware rubber gloves.

WOW WOW WOW!!!! My brother is going to have a hay day with this. I saved it for him. I can't do that spicy anymore. But he can!! And he loves the heat! When I return to the states in a few months we will make this and I will have him review it. He is always trying new sauces and this sounds fabulous for hot wings! THANKS!!!!!!!

Fabulous! I have printed this one to make for our 5th of July Cookout! We barbecue chicken on a huge spit and this will be just awesome to serve with it! This should separate the men from the boys!

SOLD ! As you noticed i love making dressings and sauces as commercial sauces always have chemicals, preservatives and poor ingredients. This recipe is interestingly unique and i like the fact you used chipotle in a BBQ sauce! I cant wait to give it a try and i'm sure that i wont be hitting the grills without it anymore :D. that a well deserved 5 my friend !
( I also like the fact you used quality oils and vinegar rather than sunflower oil and white vinegar. It makes all the difference.)

P.S Just a note- never ever fool around after handeling habeneros. Can I say that? Well anyway just thought I would put it out there. Dangerous, very dangerous.


This soundg really, really good! I used to be a real wimp with the heat, but am gradually working it up! (Still sorta wimpy, though!) But I think like a lot of others, I'll try this out. I love the compllexity of flavors you've combined! Trigger's got the right idea! Start out easy, and taste as you go forward!
