This is a Giada (heart throbbing here) recipe she did for a bachelors dinner. Very creamy, cheesy, comfort food.

Ingredients
  • 1 lb fettuccine pasta
  • 2-1/4 cups grated Asiago cheese
  • 2 - 8 oz containers of creme fraiche
  • 1 cup grated Parmesan
  • 1-1/2 Tbsp fresh chopped thyme leaves
  • 1/2 tsp salt
  • 1/2 tsp freshly ground black pepper

Directions
  1. Preheat oven to 375 F
  2. Bring a large pot of salted water to a rapid boil over high heat. Add the pasta and cook until tender but firm (al dente) ~ 8 to 10 minutes.
  3. Drain pasta and reserve ~ 1 cup of the pasta water.
  4. In a large bowl, combine 2 cups Asiago cheese, creme fraiche, Parmesan, thyme, salt, pepper, cooked pasta, and some of the pasta water.
  5. Gently toss until all the ingredients are combined and the pasta is coated. If needed add more of the pasta water, you don't want it to thick before it bakes.
  6. Butter a 9 x 12 casserole dish, place the pasta mixture in the dish, then sprinkle the remaining Asiago cheese over the pasta.
  7. Bake until golden on top, ~ 25 minutes. Remove from oven and let set for ~ 5 - 10 minutes before serving.
