How to make it

  • Preheat oven to 375 F
  • Bring a large pot of salted water to a rapid boil over high heat. Add the pasta and cook until tender but firm (al dente) ~ 8 to 10 minutes.
  • Drain pasta and reserve ~ 1 cup of the pasta water.
  • In a large bowl, combine 2 cups Asiago cheese, creme fraiche, Parmesan, thyme, salt, pepper, cooked pasta, and some of the pasta water.
  • Gently toss until all the ingredients are combined and the pasta is coated. If needed add more of the pasta water, you don't want it to thick before it bakes.
  • Butter a 9 x 12 casserole dish, place the pasta mixture in the dish, then sprinkle the remaining Asiago cheese over the pasta.
  • Bake until golden on top, ~ 25 minutes. Remove from oven and let set for ~ 5 - 10 minutes before serving.
