My family and I love this! Beware- I use LOTS of garlic! Less can be used.

Ingredients
  • 1- 750g container Balkan style yogurt
  • 1 TBSP fresh lemon juice
  • 1 TBSP extra virgin olive oil
  • 8-10 cloves of garlic ; minced
  • 1 tsp kosher salt
  • 1 c. peeled, seeded, grated cucumber

Directions
  1. Place 4 layers of cheesecloth over a bowl. (secure cheesecloth around the bowl with a rubberband)
  2. spoon yogurt onto cheesecloth. Leave for about an hour to drain. just leave on the counter- it won't go bad.
  3. When the yogurt is thick enough trasfer to a clean bowl
  4. add all ingredients and mix well.
  5. chill at least an hour in the fridge.
  6. serve with greek pita , as a sauce for lamb or on salad.

I love this stuff, especially on gyro sandwiches. Your recipe is a good one. Thanks As for the garlic, people can use to taste. That doesn't sound like to much for me but I love garlic so I'm sure I will love it.


This sounds very good. How does Balkan-style yogurt differ from Greek-style? Are they the same?

My friends and I have had a cooking slogan for many years: "There's no such thing as too much garlic." So far, we haven't been proven wrong.
