How to make it

  • combine 2c of the buttermilk, 1/2 of the hot sauce, & 1/2 tbsp salt in a large freezer bag.-add chicken & marinate for 24 hours in fridge. Keep turning so it all marinates
  • cook bacon. reserve fat to add to crisco for frying. use bacon in another recipe
  • combine mustard,paprika,cayenne,garlic, salt,pepper and flour in a lg. freezer bag
  • in a lg shallow dish combine last c of buttermilk, rest of hot sauce and salt
  • put chicken in flour mixture & coat.
  • take chicken out of the flour & dip in buttermilk bath
  • put chicken back into flour & allow it to stay in flour while you heat the oil-makes a good crunchy crust!
  • heat oil in a lg deep sided skillet (to 375 degrees)
  • place chicken skin side down-don't overcrowd the skilllet.
  • turn heat to med. cover the skillet and cook 15 min
  • flip the chicken over continue cooking 10 min- until internal temp is 180 degrees.
  • remove chicken & place on a rack(if you lay them on papertowels the bottom will get soggy)
  • serve hot or cold

    Ohhhh YESSS! This is the way to do it up right!! Buttermilk tenderizes the chicken and gives it a "twang" and the hot sauce brings it around...yuuuum! Great post! --Kn0x-- (Cute little kiddos in the pic!)
