Ingredients

How to make it

  • Preheat oven to 425
  • Cut potatoes into bowl of ice cold water
  • Drain and toss with oil
  • Pour onto baking pan
  • Place on lowest rack for best browning
  • Roast for 40-45 min turning once
  • Mash potatoes in a large bowl leaving them slightly chunky
  • Stir in buttermilk butter and onions
  • Season with salt and pepper.

    I'll tell you what I THINK - LOL (answering the above ?) I think they look and sound terrific! Especially coming from someone who hasn't eaten any starches for over a month! LOL

    I've always boiled the potatoes, then mashed them. I've never used baked ones, yummy! Good call with this recipe!

    This is one of my favorite ways to make mashed potatoes That buttermilk just adds the perfect tang. I like that you're roasting your lovely, buttery-flavored Yukons and then just smashing them. I big 5 from me, hon - thank you!
