Roasted Buttermilk Mashed Potatoes

- 6-7 cups yukon gold potatoes peeled and cut into chunks shopping list
- 2 tbs olive oil shopping list
- 1 1/2 cups buttermilk warmed shopping list
- 2 tbs butter shopping list
- 1 tbs minced green onions or chives shopping list
- salt and pepper shopping list
How to make it
- Preheat oven to 425
- Cut potatoes into bowl of ice cold water
- Drain and toss with oil
- Pour onto baking pan
- Place on lowest rack for best browning
- Roast for 40-45 min turning once
- Mash potatoes in a large bowl leaving them slightly chunky
- Stir in buttermilk butter and onions
- Season with salt and pepper.

Good flavor. Made it on the thin side on purpose this time. I'll make it up right again sometime soon.
