This chicken dish has great flavor of tarragon & ginger and is so good. Has become by noted "Chicken Dish" for the family.

Ingredients
  • 1/3 cup flour
  • 2 tsp or more tarragon
  • 1 tsp salt
  • 1/2 tsp paprika
  • 1 tsp ground ginger
  • 3 lbs. chicken (I like using the tenders)
  • Oil & Butter
  • 1 cup chopped onion
  • 3 garlic cloves minced
  • 1/2 cup chicken broth
  • 2 oz white wine
  • 2 oz sherry wind
  • 1 can mushrooms
  • 1 pkg wide egg noodles

Directions
  1. Combine flour, tarragon, salt, paprika, ginger in a plastic bag.
  2. Add chicken to coat.
  3. In skillet heat oil & butter and add coated chicken and brown well on all sides. Transfer cooked chicken to plate as you continue till all chicken is cooked.
  4. In same skillet saute onion and garlic till tender.
  5. Add the wines, broth and bring to boil.
  6. Add mushrooms and salt & pepper to taste.
  7. Add cooked chicken, and cook for about 15 minutes to incorporate taste.
  8. If you like, you can add more tarragon & ginger for taste. and if too dry add more wines & broth. No too much as the sauce should be a slightly thick sauce
  9. In meantime, boil salted water and cook wide noodles. When al dante drain and serve under chicken & sauce.

I wonder if you can brown the chicken, then bake it to finish the dish? Not a big fan of too much oil et. Sounds like a great recipe. Will try it this week!

Alterations


Sprinkle about 1-2 Tb of the flour spice mixture to the sauce. It thickens it a bit and really brings out the flavors in the chicken. If you have to add a little sherry, well so much the better.


Wonderful recipe here jlv. I think Tarragon is a often overlooled herb that should be given more attention to in cooking, and you have. This recipe is great, and as soon as the turkey leftover go away (will they ever?) I am definitely going to make this. Meals prepared in this way are so good in winter and provide nice leftovers for work. Thank you so much!
