Everyone who made this was exactly correct! This was so very delicious! I made it as written except I added extra garlic, omitted the paprika and used yellow instead of white cheese. These were minor changes. I served this with rice. This was creamy and hearty! I loved the sauce and I think I'll use it next time I make Mac n' Cheese! The thyme and bacon are a perfect addition! I added my photo to the collection!:)

THis was AWESOME!!! I always used to make brussels just roasted w/carrots in the oven, cuz i really didnt know of any other way to do them. OMG, this is the best brussel sprout recipe, and we will be eating these quite often in our house from now on~. I made just as is, only i didnt have sharp white cheddar so i used a combo of mozz/mild cheddar. And i used country grainy mustard cuz thats what i had. SOOOOO yummy!!! thanks for putting up this recipe!

Made your brussels sprouts about a week ago. Matt and I both really really liked them! He loves sprouts pretty much any way they are cooked. I only like them depending on how or what they are cooked in or flavored with. These were very rich and filling. The bacon went really well in these. Tasty. Thanks for the recipe.

Oh my gosh... this seriously sounds so yummy! Brussels sprouts are one of my most favourite veggies. And cheese? Uhm... YES. I am a cheese lover. This is one of those recipes that would be great on a chilly evening after a long day. Nice, warm, comforting and tasty. Mmmm.. can't wait to try it out.

I don't eat meat (except seafood) though so instead of the bacon I think I might try adding a bit of smoked cheese (gruyere or gouda). That will give it that smokey hint that the bacon does, but still be appropriate for those who don't eat pork.

I'm gonna make this tomorrow and I'll let you know how it turns out!!! :)

    Thanks for the great recipe.

Okay...made this tonight to go with Herbed Pork Roast(from this site) and my own Smashed Red taters...holy mercy, this was good! :) What a great way to turn a good for you veggie very, very bad. ;) Now, I was a lil confused on where the bacon was meant to go, so my preparation was just a bit different. Here's what I did: chopped cold bacon and fried it in my cast iron..when it was nearly done, I added garlic and onions. Boiled sprouts as directed, poured the bacon/onion/garlic over them. In same pan as that mixture was in, I made the sauce...just melted butter added flour to make a roux, then the stock, milk, fresh thyme, and everything else as directed. So, very minor changes, and all in prep only, but for the fresh herb. SOOO good! Thank you, Lori...hope the pic are okay, but feel free to remove them as you get your own, or better ones. :)
