  • 1 Cup sifted unbleached all-purpose flour
  • 2 table spoons of malted barley flour
  • 3 Large eggs
  • 1 Cup of whole milk
  • 1/4 Teaspoon salt
  • 1 Tablespoon of unsalted butter melted, plus additional melted butter, vegetable oil, or vegetable spray for greasing pan.

Directions
  1. Preheat the oven to 400F preferably a convection oven if you have one.
  2. Put the oven rack on a lower rack, so that the tops of the popovers will be nearer to the middle of the oven
  3. In the preheated 400°F oven, heat a large muffin pan on top of a baking sheet for 5 minutes, or until it is hot. Melt about 1 tablespoon of butter in a small bowl in a microwave. Take the muffin pan out of the oven then shut the oven door and brush the muffin pan cups with plenty of melted butter or use vegetable spray.
  4. Whisk flour salt in a medium bowl
  5. WARM THE LIQUID MIXTURE:
  6. Warm this liquid mixture in the microwave or on the stove until it is about lukewarm in temperature or heat it in a small pot on the stove top until it is lukewarm if you do not have a microwave.
  7. Do not over heat or you will wind up with scrambled eggs.
  8. In a 2-cup Pyrex measuring cup, whisk the eggs until the egg yolks and whites are completely mixed and change color to a uniformly pale shade of yellow.
  9. ADD THE WARM MILK MIXTURE
  10. Whisk the liquid ingredients into the dry ingredients only until just mixed.
  11. There will be some small lumps left in the batter.
  12. Fill the cups of the muffin pan half full with the batter using the 2-quart measuring cup directly into the cups of the muffin pan. Replace the muffin pan on the baking sheet in the oven.
  13. Bake for 38 to 42 minutes for a standard oven or 30 to 35 minutes for convection oven.
  14. Do not open the door for the first twenty minutes of baking.
  15. Serve warm with jam or butter.
