- Zucchini Ribbons with Lemon and Garlic
- 4 medium zucchini
- 2 tablespoons butter
- 1 or 2 garlic cloves
- 1 tsp grated lemon zest
- 2 tsp minced fresh tarragon
- salt and pepper
Directions
- With a vegetable peeler, cut 4 medium zucchini into long, thin ribbons.
- Melt 2 Tablespoon butter in a skillet; add zucchini, 1 grated garlic clove, and 1 teaspoon grated lemon zest.
- Sauté, stirring, until tender, 2 minutes.
- Sprinkle with 2 teaspoon minced fresh tarragon.
- Season to taste with salt and pepper.

I had this for lunch.. just this. I used 2 small zucchini and it was wonderful... I think quite healthy too.. not that much butter... I guess I could half it with olive oil and still keep the flavor? I sprinkled it with parm cheese.. Oh yeah... perfect lunch!
