Not only is this dish delicious but it is extremely easy to make and quick. I have made it with scallops but you can also substitute shrimp for the scallops and it was just as good.

I can taste it now.... Yummy. I used Panko bread crumbs in a similar dish last year...it really added a crispy texture to the coated scallops under the high heat.

I did use crushed garlic croutons instead of bread crumbs, since that was what I had available. I also sauted the scallops for about 1 minute, in the pan that I had prepared the mushrooms, onions and garlic in - just so I could get the scallops to absorb every essence of the flavorful bread stuffing! This is a new favorite...thank you so much for sharing! I think it would be great on chicken, pork, beef, just about anything.

I had a couple of pounds of shrimp in the freezer, so I made this with shrimp last night, and it was AMAZING. This is absolutely delicious, and so surprisingly easy to make. I will definitely be serving this one again!

I'm going to have to leave the onion out because I really want my son to eat this, and he won't if there is any trace of onion, but at least he loves garlic.

Ended up making this dish tonight, we only needed 1 pound of scallops, I placed everything on top of a bed of angel hair pasta to make it more filling as my husband has a big appetite also did add the prosciutto on top, everything was perfect and I loved the taste of the scallops but next time I'm going to use shrimp as my husband and son don't really like the scallops, but they did eat it. (this was my first time ever making scallops and only my second time eating them)
