Baked Scallops And Mushrooms Recipe

Not only is this dish delicious but it is extremely easy to make and quick. I have made it with scallops but you can also substitute shrimp for the scallops and it was just as good.

Ingredients
  • 1/2 cup butter
  • 2 cups thinly sliced mushrooms
  • 1 medium onion, finely chopped
  • 4 cloves garlic, minced
  • 2 pounds bay scallops
  • 1 cup soft bread crumbs
  • 1 cup finely chopped parsley

Directions
  1. In a large skillet melt 1/4 cup of butter.
  2. Saute the mushrooms until tender.
  3. Add the onion and garlic and cook briefly.
  4. Remove from the heat.
  5. In a large bowl, combine the scallops, bread crumbs, parsley, and mushroom mixture.
  6. Mix well.
  7. Spoon into a 9x13 inch dish.
  8. Melt the remaining 1/4 cup of butter and drizzle over the mixture in the dish.
  9. Bake in a 450 degree oven for 10 minutes.

I have tried a similar recipe with shrimp. My husband loves scallops. I'm going to try this one.

I have some scallops in the freezer - I used Dugger's recipe for part of them (the Broiled Scallops with Bourbon Sauce...yummy!), and I think your recipe will be PERFECT for finishing off the last of them. This sounds delish - will let you know how I did with it! I'll let you know, too, Mich...


This recipe was PERFECT, Debra - I even remembered to take a picture to post. It's like a garlicky, mushroom and onion stuffing!! I did use crushed garlic croutons instead of bread crumbs, since that was what I had available. I also sauted the scallops for about 1 minute, in the pan that I had prepared the mushrooms, onions and garlic in - just so I could get the scallops to absorb every essence of the flavorful bread stuffing! This is a new favorite...thank you so much for sharing! I think it would be great on chicken, pork, beef, just about anything.

I had a couple of pounds of shrimp in the freezer, so I made this with shrimp last night, and it was AMAZING. This is absolutely delicious, and so surprisingly easy to make. I will definitely be serving this one again!


I think I have a bag of sea scallops hiding in the back of the freezer just for times such as these !


Great summer dish, I wish I had some more Chanterelles but they won't be out again until early fall/late fall, boo hoo. What type of mushroom did you choose?

Anyway I have this saved so I can make it.

I'm going to have to leave the onion out because I really want my son to eat this, and he won't if there is any trace of onion, but at least he loves garlic.

Ended up making this dish tonight, we only needed 1 pound of scallops, I placed everything on top of a bed of angel hair pasta to make it more filling as my husband has a big appetite also did add the prosciutto on top, everything was perfect and I loved the taste of the scallops but next time I'm going to use shrimp as my husband and son don't really like the scallops, but they did eat it. (this was my first time ever making scallops and only my second time eating them)

This sounds fantastic! I would love it with shrimp or scallops or a combination of both! Yum! I'd go for the extra garlic as well. I tend to do that anyway. I look at amounts in recipes as just guidelines anyway.

I've got extra scallops in the freezer! I'm making this this week after I get more shrooms :) I just used all mine last night. As a matter of fact I made my Seductive Seafood Bake, which used some of the afore mentioned scallops.

I make my scallops very much like this, only I use Ritz cracker crumbs on top. Wonderful!

Alterations


I am going to add some crisp Prosciutto and crumble it up on top.


I can taste it now.... Yummy. I used Panko bread crumbs in a similar dish last year...it really added a crispy texture to the coated scallops under the high heat.
