  • 4 cups vegetable oil, for frying
  • 2 cups flour
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon baking powder
  • 2 teaspoons cornstarch
  • 1/2 teaspoon salt, plus more for seasoning
  • 1/2 teaspoon ground white pepper
  • 1 (12-ounce) bottle Guinness, at room temperature
  • 1 large yellow onion, peeled and cut into 1/2-inch thick rings

Directions
  1. In a deep stockpot or deep-fryer, preheat oil to 360 degrees F.
  2. Place 1/2 cup of the flour and the cayenne pepper in a resealable plastic bag or paper bag and set aside.
  3. In a medium mixing bowl, combine the remaining flour, the baking powder, cornstarch, salt, and white pepper. Whisk in Guinness until smooth.
  4. Place the onion rings in the bag containing the flour mixture and toss to coat well. Working in batches, transfer the floured onion rings to the beer batter, making sure that each ring is thoroughly coated with the batter. Remove the rings from the batter and allow excess batter to drip off from the onion rings and immediately place in the preheated oil. Fry, in batches, until golden brown, turning rings as needed, about 2 to 3 minutes per batch. Remove the onion rings, place on a paper towel-lined plate, and season with salt. Repeat with remaining onion rings. Serve hot.

Thank you all for your comments and ratings. Just for the record, I am not a BIG Guinness drinker. I find it kind of heavy and domineering. I guess I'm a beer sissy - ha! However, I used Guinness Draught for this recipe and it adds a lovely, light taste to the batter. My friend at work used Guinness Stout and loved it, but he's a big fan of Guinness Stout. So try what you like!


Went to your home page to leave a comment and saw the picture of the onion rings...those are a thing of beauty! I used to make my own onion rings many years ago, but haven't done it in ages. I always found the beer batters to be the best. I'm really looking forward to trying this recipe - thank you for sharing it!

Wonderful!!!! I love these and they are fairly easy to make. I had thought it would be much more difficult. My boyfriend was very impressed. We are big onion ring fans and have been on the lookout for the best rings in town. Well, the best rings in town are now at my house!

Great post! My family loves onion rings and this recipe is a little different from the one I've used in the past. A much better batter to coat them in. Yummy!!

They sound delicious but what is Guiness? Probably it's something well known in the U.S. but have never heard of it. Your pictures are lovely.

(Almost) anything with Guinness is a winner in this house (Guiness cake not so much)!! Guiness and onion rings ... that's a no brainer double winner!

I finally got around to making these today. First I had to fight my husband for one of his Guiness beers.(he tried to foist a Hieneken on me) Then he liked them so well he calls them Onion Danish!

Ordinary onion rings will never be the same thrill as these tasty morsels. The extra cayenne adds a great Kick.
I do exactly as you do and let the finished onion rings sit in a single layer on folded out paper bags on a sheet pan. Are you looking over my shoulder?
