Wasabi Kissed Avocado And Potato

- 4 small waxy potatoes - peel, boil and cool then cut into chunks shopping list
- 2 large ripe avocado - well chilled shopping list
- 4 level tbs sliced scallions shopping list
- ~~~~~~ DRESSING INGREDIENTS ~~~~~~ shopping list
- 6 tbs light olive oil shopping list
- 3 tbs fresh squeezed lime juice shopping list
- 1 tsp prepared wasabi paste (japanese horseradish) shopping list
- 1 tsp roasted sesame seed paste shopping list
- 2 level tsp salt or to taste shopping list
- 3 level tsp sugar or to taste shopping list
- Half level tsp red pepper flakes shopping list
- Half level tsp garlic powder shopping list
How to make it
- Put all the dressing ingredients into a clean empty jam jar. Replace lid and shake jar vigorously to combine thoroughly. Taste and adjust to your liking.
- Using a really sharp knife, score the unpeeled avocado right around from the head to the bottom, till you hit the stone. Grab the two cut halves and twist firmly in opposite directions simultaneously. The stone will remain in one half of the avocado. Tap the stone sharply with the sharp side of the blade to embed the knife in the stone. Grip the avocado firmly and twist the knife sharply to dislodge the stone. Peel and cut avocado halves into chunks.
- Combine avocado, potato and scallions in a large non reactive bowl. Pour dressing over and toss gently. Serve on its own as a starter or vegetarian course or as a side with grilled steak or seafood.
