This is my take on the humble but always dependable tater salad. I love everything that's in this salad, especially wasabi, but with this hot headed little gem of a condiment, a little really does go a long way.

Ingredients
  • 4 small waxy potatoes - peel, boil and cool then cut into chunks
  • 2 large ripe avocado - well chilled
  • 4 level tbs sliced scallions
  • ~~~~~~ DRESSING INGREDIENTS ~~~~~~
  • 6 tbs light olive oil
  • 3 tbs fresh squeezed lime juice
  • 1 tsp prepared wasabi paste (japanese horseradish)
  • 1 tsp roasted sesame seed paste
  • 2 level tsp salt or to taste
  • 3 level tsp sugar or to taste
  • Half level tsp red pepper flakes
  • Half level tsp garlic powder

Directions
  1. Put all the dressing ingredients into a clean empty jam jar. Replace lid and shake jar vigorously to combine thoroughly. Taste and adjust to your liking.
  2. Using a really sharp knife, score the unpeeled avocado right around from the head to the bottom, till you hit the stone. Grab the two cut halves and twist firmly in opposite directions simultaneously. The stone will remain in one half of the avocado. Tap the stone sharply with the sharp side of the blade to embed the knife in the stone. Grip the avocado firmly and twist the knife sharply to dislodge the stone. Peel and cut avocado halves into chunks.
  3. Combine avocado, potato and scallions in a large non reactive bowl. Pour dressing over and toss gently. Serve on its own as a starter or vegetarian course or as a side with grilled steak or seafood.

I'm not especially fond of super-spicy things, but I think the potato and avocado will even it out a little. Sounds like an interesting option for the next family BBQ. =)

Danadooly daaaaling, it was absolutly fabulous!!!! Love love love it. Had it for dinner tonight with shrimp/vegetable pot stickers and I drizzled some of the dressing over the pot stickers.

I needed some kind of carbohydrate to go with my spicy seafood soup I made for lunch today. Scouted around GR and found this recipe, which I made.

All I can say is YUM! This was seriously so so good. It was so interesting to have such a "Western" ingredient like potato matching w/ a classi Asian flavour. It was so delicious! The sesame added a nice touch too. (although truth be told, I used a teensy bit of tahini and a couple drops of sesame oil, for flavour)

That dressing was gorgeous too.. and the avocado just rounded everything up. Mmmm... this is a new favourite. Even the dressing I could see using on a nice bean sprout salad. Or what about dressing some edamame beans in it? Or even tossing some cellophane noodles w/ a bit of green onion and drizzling the sauce on top?

So many possibilities! Thanks SO much for this grrrrrrrrrrreat recipe. :-)
