Spring Has Sprung Rolls Recipe

These Spring Rolls contain a mix of Arame and Dulse sea vegetables, spinach, watercress, parsley carrots and ginger, Simple, nutritious and delicious. I like to serve these with a simple dipping sauce of tamari soy sauce and fresh ginger.

Ingredients
  • 6 carrots of mixed colors, purple ,yellow and orange cut into match sticks
  • 1/2 package of baked tofu cut up into match stics
  • a 1 inch piece of ginger pealed and minced fine
  • a hand full of watercress
  • 1 clove of garlic minced
  • A few sprigs of parsley leaves only
  • about ten fresh spinach leaves
  • 8 Large Spring roll wrappers
  • 3 tablespoons Olive Oil
  • 3 tablespoons Tamari soy sauce
  • 1/2 cup Arame soaked in cold water for 3 minutes and drained
  • A 4 inch strip of Dulse Sea vegetable chopped and soaked with the Arame
  • 8 Large Spring roll wrappers
  • 1/4 cup Tamari soy sauce for dipping
  • A small amount of ginger pealed and minced fine about 1/2 inch

Directions
  1. Heat the olive oil on medium and place the carrots and fry until a little tender yet still crisp
  2. add the garlic and the ginger
  3. add the Baked Tofu strips and the soaking water cook until water is nearly gone set aside to cool
  4. Take a large spring roll wrapper and run under warm water for a few seconds
  5. Place on counter top
  6. Place a small amount of the presoaked Arame and Dulse near the bottom, close to you.
  7. Place a small amount of carrot filling next to Arame
  8. Start rolling, folding in the sides of the wrapper and continue to roll a tight as you can without ripping
  9. Place onto a tray seam side down in rows
  10. DIPPING SAUCE
  11. In a small bowl combine Tamari soy sauce and the ginger
  12. ** Optional add a few drops of Sesame oil to the sauce.
