This recipe and photo were given to me by a friend and puts a spicy spin on the old chicken favorite (and I’m not talking chilies here). This goes great with hot naked veggies and a bedded salad. The men in my family absolutely love it!

Ingredients
  • 3 ½ lb. Whole CHICKEN with giblets removed and skin oh so gently separated from breast meat.
  • 2 T OIL of your choice or BUTTER.
  • SALT & LEMON PEPPER to taste.
  • 1 lg. LEMON cut in half (be sure to put cut side against breast so the juice penetrates the meat).
  • 1–2 sprigs of ROSEMARY.
  • ~~~~~~~~~~
  • Tip: Loosely cover and place in 350of oven for 30-45 minutes. Remove cover and continue to roast until juices run clear, basting every 15-20 minutes.

Directions
  1. Massage hen with oil
  2. Insert Herb and spice inside
  3. Tarts under skin, roast
