Ingredients

3 ½ lb. Whole CHICKEN with giblets removed and skin oh so gently separated from breast meat.

2 T OIL of your choice or BUTTER.

SALT & LEMON PEPPER to taste.

1 lg. LEMON cut in half (be sure to put cut side against breast so the juice penetrates the meat).

1–2 sprigs of ROSEMARY.

Tip: Loosely cover and place in 350of oven for 30-45 minutes. Remove cover and continue to roast until juices run clear, basting every 15-20 minutes.

Directions

Massage hen with oil

Insert Herb and spice inside

Tarts under skin, roast
