Lemon Breasted Chicken Haiku Style

This recipe and photo were given to me by a friend and puts a spicy spin on the old chicken favorite (and I’m not talking chilies here). This goes great with hot naked veggies and a bedded salad. Ingredients
- 3 ½ lb. whole chicken with giblets removed and skin oh so gently separated from breast meat. shopping list
- 2 T oil of your choice or butter. shopping list
- salt & lemon pepper to taste. shopping list
- 1 lg. lemon cut in half (be sure to put cut side against breast so the juice penetrates the meat). shopping list
- 1–2 sprigs of rosemary. shopping list

- Tip: Loosely cover and place in 350of oven for 30-45 minutes. Remove cover and continue to roast until juices run clear, basting every 15-20 minutes. shopping list
How to make it
- Massage hen with oil
- Insert Herb and spice inside
- Tarts under skin, roast
