Bacon, Mushroom Toast Rolls

- 4 slices cooked bacon, finely chopped shopping list
- 1/2 pkg. fresh mushrooms, finely chopped shopping list
- 1 medium onion, finely chopped shopping list
- 4 oz. light cream cheese, softened shopping list
- 10 slices sandwich bread, crusts removed (I use whole-wheat), depending on how thick you spread the cream cheese mixture shopping list
- 3 lrg. dill pickles shopping list
- 1/4 cup melted butter shopping list
How to make it
- Sauté mushrooms, and onions until tender, not crisp.
- Stir in cheese and bacon. Mix well.
- Roll bread lightly with a rolling pin. Spread each slice with about 2 tbsp. filling.
- Slice pickles lengthwise into quarters. Place one piece of pickle lengthwise on each bread slice and roll. Fasten with a toothpick.
- Place seam side down on a baking sheet. (Can be frozen at this point)
- Brush rolls with melted butter.
- Bake at 375F for 20 minutes. Remove toothpicks.
- Serve hot.
- Enjoy!
