Farewell Chicken

This is another 'what do I have in the pantry recipes'. And then what can I do with it? Well here's what I did. And if you are cooking for 2, this is great for a next nite 'just heat up 'quick dinner.
Ingredients
- 8 chicken legs and thighs washed, patted dry shopping list
- 1 can coconut milk shopping list
- chopped frsh or canned tomatoes (drained) shopping list
- 1 can potatoes shopping list
- 2 cups frozen peas shopping list
- basil shopping list
- chili powder shopping list
- 3 garlic cloves whole shopping list
How to make it
- butter pyrex 9 x 13 oven dish
- preheat oven to 350F
- place chicken pieces in dish
- pour on coconut milk
- tomatoes next
- sprinkle basil
- chile powder
- place garlic around
- Bake in oven 50 minutes and add potatoes and peas and return to oven for 10 minutes.
- That's really it! Enjoy!
