Spinach With Chickpeas And Peppers Recipe

This is another way to eat your spinach. Really colourful, full of flavour, good for you and super easy.

Ingredients
  • 2 tbsp olive OR vegetable oil
  • 2 lg garlic cloves, chopped
  • 1 onion, chopped
  • 1 sweet bell pepper, seeded and sliced in strips
  • 1 tsp. cumin
  • pinch cayenne pepper
  • 1/2 tsp turmeric
  • 14 oz canned chickpeas, drained
  • 18 0z spinach leaves OR 1 package frozen spinach, defrosted
  • salt and pepper to taste

Directions
  1. Heat the oil in a heavy skillet over med.-high heat. Add onions and garlic and sautee until golden and caramelised.
  2. Add the pepper strips and sautee for 3 more min. Add more oil if needed.
  3. Add cumin, cayenne and turmeric and cook, stirring for another minute.
  4. Add the chickpeas and stir until coated with spices.
  5. Stir in the spinach. You can add a little liquid like water or chicken broth at this point (about 2-3 tbsp). Cover and cook until wilted for 4-5 min. (If using frozen spinach, cook until warmed through, but still retains green color).
  6. Uncover, season with salt and pepper and serve.

And yet another brilliant recipe! I love garbanzo beans/chickpeas and rarely use them because I usually use them in soups or salads. Thanks for the kind words about the parsnips & the cauliflower. Lately I've been microwaving roots (carrots, potatoes) and then doing something to them. Quicker and really keeps in the flavor.
