Thursday Temptations?

    Howdy, friends. I can't believe I can post. There are computer angels afoot, I believe.
    All of you have been cooking up a storm and I have been wanting to jump in and discuss so many times. Happy to see so many new posters. It is a good group!

    Going to make chicken and broccoli stir fry, with lots of ginger. Brown rice on the side. Sliced oranges with sherbert for the dessert hungry hubby.

    morning everyone else!
    picked up mom's laundry and brought it back here to do. So I have to go back and drop it off. I might try to take a peruse by the building 19 this afternoon. Remember the deals I got last Thursday when they where pulling things off the pallet. (worth getting yelled at LOL)
    Tonights dinner is pasta with meatballs, already all made in the freezer just have to defrost and boil the pasta. Do you believe hubby said he is sick of so much meat??? WTH? Not sure what I would make without meat since he doesn't like chicken and we are having pasta tonight.

    I manned leaks again last night. Why does it always rain when he's on night shift? lol The guy came and put some more nails / screws or whatever in the metal roof. Fixed the ceiling leak in the one room, but did nothing for the window leak. That is the weirdest thing. There is a double window in the bedroom. Older house, it's framed with wood. There is an eave hanging over that side of the house. The outside of the window isn't even wet. It drips buckets full all the way across one of the windows, and drips between the window and the storm window. I was changing out my plastic ice pails and cool whip bowls at 4 am, along with the towels I had under them. LOL Have little bowls/pails all the way across the window. You might be a redneck...

    I don't know what's on the menu at my house tonight. I halfway expect Bryan to use a vacation day if the rain keeps up and he doesn't get the guy back out today...if he does, I will have to cook tonight. lol If it's just me, I see tomato soup and grilled cheese on the menu.

Fix it now or it will cost way more than an arm and leg to get it done. The inspector should have your roof hosed down while he crawls around in the attic looking for the leak.

    Pumpkin Ice Cream custard is cooling off. Should have some nice pumpkin ice cream tomorrow. If it turns out, I'll link the recipe.

    Janet, we've got similar temps with 40F but today is overcast so not as bearable.. In fact it's supposed to snow tonight/tomorrow :( I don't believe I've ever had a rotisserie chicken. I've had Boston Market chicken but just pieces, is that the same thing?

    Lori, I know how frustrated leaks can be (that's a whole other rant) and hahaha @ you might be a redneck :-P

    I am SO frustrated b/c our heat isn't working. At first I thought it was the main boiler/chiller b/c as a loft/condo community they have the switch over the main thing to go from AC to heat. Well, they've done that but we're still not getting warm air in our unit. Maddening b/c we just replaced the heat pump (rather costly!) and they've had to come out 2 times since then already to replace parts twice over the course of about a year.. GRRR!! I just don't want to have to call these guys and wait around while they tinker and figure out some stupid tiny part that shouldn't need to be replaced on a brand new unit! It's like having a part-time job without getting paid. And now I have no choice. Sorry for the rant but I'm pretty aggravated!
    On to something more pleasant... dinner! I'm making Roasted Corn And Redskin Potato Chowder but leaving out the pimientos (my beau would not go near them) and using milk instead of evaporated milk. If I can get to the store, I will try it with the potato flakes. I think I'll put some bacon crumbles and a bit of shredded cheese on there. I might make some Apple Cider Muffins today b/c they just look so darn good!

    Hi, Janet! What will you have with your chicken? GO SENS!! :) Stay warm!! They actually put a “freeze warning” on the news last night. Why are they warning people, we live in the Midwest, we should be expecting an overnight freeze right about now. It seemed a little overly dramatic to me.
    Points – I’m curious what you will do with all of those freezer finds. Steak tacos with corn salsa or steak sandwiches with provolone sauce Flat Iron Steak Sandwiches With Garlic Provolone Sauce
    with the meat, maybe? And a blackberry cobbler – you can’t beat that with a stick!! Don’t know about your green stuff – let us know what it is when you figure it out.
    Hey, Laurie! Seriously, your hubby has had too much meat?? I’m with Dahlia, I don’t think I’ll ever hear that out of “the man’s” mouth!! However, when I’m fed up with meat, but want something substantial just the same, I use mushrooms. Especially with pasta! Lots of cremini and white button mushrooms, my fave! Of course, I still have to fix a side of beef for him to gnaw on!! :)
    Lori, So sorry to hear that the leaks are still a problem! UGH!! Let me tell you, if I were tending leaks at 4 AM, I’d be in quite a nasty spirit right now and demanding immediate repair from someone!! I have no personal experience with leaks, but I’m sure Points is right, especially if your windows are framed in wood – you could end up with a lot of rot and possibly mold. I’ll keep my fingers crossed that things get dried out for you soon!! Grilled cheese & soup sounds so good – the simplest things are sometimes the very best of all.
    Hi, Dahlia! Oh, I’d be hopping mad if it were 40 degrees and I had no heat!! Again (as with Lori’s situation) I’d be demanding immediate repair from someone!! Hopefully that fantastic sounding soup will keep you warm and happy. Sounds great! That reminds me, I still need to get my favorite soup recipes posted! And those apple cider muffins – yum!

    Well, tonight is the night we will finally try Lori’s chicken – I’m so excited!!! I’m going to make butternut squash baked macaroni and cheese along with it and some sort of veggie. Probably corn for the guys and I’ll sauté up the remainder of my spinach with some garlic and have that. My mouth is watering – I wish it was the end of the day instead of the beginning!

That room was added on 15 years ago or so...he doesn't know how the guy will get to that portion of the house up in the attic, he doesn't think there will be enough air for him to stay long enough to find it. Surely they can hook a fan up or something though...he'll have to do it somehow. Geeez.

I have been experimenting with adding all sorts of things to my baked mac & cheese for about a year & 1/2 now. I took baked mac & cheese to a memorial day party this year and the kids gobbled it up - know what it was full of? mashed cauliflower!! They LOVED it!! I experiment with different seasoning and toppings (bacon & breadcrumbs is the winner so far). I like using the butternut squash and/or cauliflower because when I do that, I don't use a roux. I'm also going to try an onion & garlic puree soon, which Rocco DiSpirto uses in lieu of roux in his baked mac & cheese (saw that recipe last week). It seems to me that I can experiment six ways from Sunday with baked mac & cheese and as long as I don't burn it, it's always good. Some better than others and some absolutely fantastic, but always edible for sure!

    I got to work this morning on using up the browning bananas. Still have 3 left but I made a dozen muffins and a mini-loaf. The folks will be happy when I bring them their share of the Banana Peanut Butter Oatmeal Muffins .

    I got a very nice spaghetti squash which I think I'll fix for dinner. Probably Shrimp And Spaghetti Squash as that will make me and the folks very happy. I'll just leave a nice batch of shrimp out for Mr. SuchAFuss and he'll be happy too.

    Essential, I do admire your inventiveness in sneaking the veggies into your recipe. I'll be watching your techniques closely to see if I can get some into Mr. SuchAFuss. I was threatening to fix him a Mac & Cheese but he likes to make his own so its a no sneak opportunity.

    Oh Lori., Don is a cutie, sure. He is also gay with a life partner. They have adopted 4 kids. 13, 12, 4 and 2. He's a very sweet guy that calls me hun and sweetie. Makes me feel very comfortable and not at all like a freak. Which is how I feel about 80% of the time anymore....

    It's nice having the same surgeon as Kim. Was able to ask him how she is doing since a$$hole boyfriend won't give any info. He said he couldn't tell me a whole lot because of patient confidentiality but when I said her BF doesn't like me he said 'me either' and told me a bit more. LOL She might (cross your fingers) be getting out in a week. Went across the street to see her. She told me another surgery today to check things and change the foam. Hard to explain what her belly is like. There is a dinner plate size area that is covered with this black foam stuff. They are going to take a skin graft off of her leg and move it to her stomach. Steve took me over to see her and she is in much better spirits. Bored as heck though.

    Stopped by Taco Bell on the way home for a chalupa. yum
    Dinner tonight will probably be fish since that will thaw easily.

    Dahlia - I really love most vegetables too and the kids are actually very accepting of most veggies as is my beau. I'm playing around with the mac&cheese in the same way I've been playing with my baking lately. Trying to swap in healthier ingredients, like using the veggies in mac, bananas or applesauce in baking, whole wheat flour, etc. Just trying to find some ways to keep enjoying our MO comfort foods and save our cholesterol!! :) Although I always love the simple, classic style for sure.
    I'll start writing things down so that I can post them and share my experiments! It would be totally cool if we lived closer - could put on a mac & cheese buffet!! :) We'll just have to swap ideas instead! I haven't tried your red lobster biscuits yet, but that sounds like the perfect addition to my ultra-deluxe Thursday dinner! They just got added to the menu.
    Hi, Ang - So glad that everything went well and it is just minor irritation. Sorry it will take longer than you'd hoped for the reversal though. Glad your sister is doing better too! Yum - taco bell, it's been so long since I've had that...

    Changed my mind on the Spaghetti Squash for this evening. I'd forgotten that I had ground turkey thawed and picked up a great deal on peppers yesterday at the store. Switched gears and made Stuffed Peppers instead. Again, mostly made the recipe but fiddled it enough that I don't feel comfortable posting in "I Made It" . Seemed silly to post up another stuffed pepper recipe when there are dozens out there already and all mostly similar. I picked this one because I liked her cooking technique.

    Essential I love that fish experiment. Really sounds great.

    I have a similar recipe for the spagetti squash and shrimp, at first I thought it was mine LOL
    So Rebecca's dr called today, her test results came back for the Celiac/Gluten. The doctor said she tested negative but said if Becca is feeling better and more energetic on the Gluten Free she should stay on it. Gonna have a talk with her today and see what she wants to do.

    Bryan's contractor came out this morning while it was raining, and they know what's going on, just have to isolate where, now. It's quit raining, thank goodness. They will be out working on it tomorrow afternoon. It's running behind the gutter then getting in the soffit and behind the siding...sounds like a mess to me.

    Pat, your dinner sounds good, too! Glad they enjoyed the meatballs last night, as if there was a question. lol

    I found this soup Red Pepper Horseradish Soup
    on the homepage today and thought it looked mighty interesting. I think I'll probably need to use some tomato in it for the kiddos - calm it down a little perhaps - but I'll be experimenting with this one. Looks different and interesting.
    Lori - Rocco DiSpirto (I may be spelling his last name wrong) is a "celebrity chef". He has a bunch of cookbooks out and is always a guest judge on Top Chef (I love that show!). He also contributes to Runner's World and Fitness magazines, so I've seen a number of his recipes in those. I found this onion/garlic puree idea from him in my Fitness magazine and since I harbor a deep and everlasting love for onions and garlic, I promptly tore that page out to try it.
    You MUST try spaghetti squash, it's so good! Plain or in a recipe like this one: Chicken With Spaghetti Squash

    haven't decided what to do with the berries. Threw out the green stuff. It was poke salat and we don't eat that.
    Pulled out a bag of okra from the freezer. It was a plastic bag that you get from the supermarket with just a knot tied in the top. Mother strikes again. Don't know if they will be any good but we'll look at it after defrost.

    Wynne, it DOES get cold in FL and seems moreso lately.. my mom lives near Orlando and they had frost that killed some plants of hers last year. And my cousin lives in Miami and does not even have heat at her condo but was walking around in a winter parka one time when we were on the phone last winter.. At least your cold weather will hold out for a bit. The furnace guy is supposed to be here tomorrow morning & I hope he can get his job done before I have to leave for my hair appointment!

    Lori, glad they found the root of the problem in your leaky window!

    I am working on the muffins now and decided to just do the Cocoa Krispies while I'm at it to please the man :-) May as well after I dirty the freshly cleaned kitchen. Then I'll start on the soup and finally the biscuits. I have "The Real Bonnie & Clyde" playing on my DVR from National Geographic Channel.

    I can't watch Martha anymore either and I don't buy her magazines, but I used to absolutely worship her. I still get a big bang out of her approach to things! I can't watch her show because it bothers me how cold and condescending she is to people. :( Oh well - I have my old Martha Stewart books from 10 years ago and that's all for me, I pull those out if I need some perfectionist inspiration!! :)
    SOOOOO - what a FABULOUS, FANTASTIC, AMAZING dinner we just had. Whoever said "Lori's chicken for mayor" had it absolutely right!!! Wow, I can't remember the last time I had such a tasty, moist, heavenly chicken breast. I will say that I either used to much "sauce" or too many breadcrumbs because there seemed to be something of an excess in the coating. But let me tell you, know one cared a bit because it tasted so great!! Along with that were Dahlia's superb biscuits - SO GOOD!! And my Baked Butternut Squash Mac And Cheese
    which won rave reviews from all of my guys!! I was so pleased! We also had corn & the sauteed spinach, but it was rather overshadowed by the rest of the meal. What a fantastic success all around, I'll be making everything over & over again.

    No school for the girls tomorrow. Fire going in the fireplace. Took too long of a nap this afternoon so decided on pizza. Going to go get settled in and cozy with the kiddos and wait for my new favorite thin crust cheese pizza.

    Brooke, I am so glad you all enjoyed the chicken! LOL, the coating can get a little on the thick side. It's good though, huh? Sounds like a great supper. I'm gonna have to try some spaghetti squash.

    Never been a Martha fan...she gets on my nerves. lol

    Gotta find that Women of SNL video. Need to check out Rocco, too.

    Sens won 4-1 against the New York Islanders and I had a couple of glasses of wine so I'm feeling a little better. LOL. Not a lot, but a little.
    Lori did warn people about putting on too much of the coating Brooke and she said to use your silicone pastry brush to apply it in moderation which is what I did and mine was crunchy and everything in proper relation. It sounds like you'll give it another try anyway so just watch that part next time.
    Ang...we had a fire going on over here too. Good for the soul and all that ails you. I could do with a little piece of your thin crust pizza. Made a sandwich from the Rotisserie Chicken but the Curry Pasta Salad was horrid. I should have gone with Pat's memo of Mashed and a veggie.
